Fall is finally in full swing here in Michigan. After a week or so of being in the 80's, the temps have dropped, leaves are changing, and we are in the thick of football season. My favorite thing! I've been spending the weekends watching games with my friends and family and making lots of delicious dishes so no one goes hungry. I like to focus on recipes that are easy to make and don't take a lot of time, and these Red Chile Chicken Flatbread Pizzas are no exception. Just a handful of ingredients is all you need to make these hearty and flavor packed pizzas.

One shortcut I've been touting for years is store bought rotisserie chicken. One chicken can go a long way and can be used in so many different recipes. When I bring one home I immediately pull the chicken off the bones and shred it up. I pack it up in a large plastic bag and it's ready to go whenever I need it.

One thing you can always find in my refrigerator is a rotisserie chicken. They are so versatile and can be used in so many different dishes, from wraps to quesadillas to topping a pizza. Chicken salad is a favorite around here but I never seem to make it that often. I decided to jazz up my typical chicken salad recipe with some apples, pecans, and a light and delicious yogurt dressing. I can honestly say that I am obsessed with this salad and have made it several times already since creating this recipe. It's perfect for lunch, a light dinner, and even as a snack!

I can't believe it but school is almost back in session! So tell me, are you excited that the kids are headed back to school? Or are you sad? In talking to my friends I've found about a 50/50 split between those that are ready to get back to their routines and those that want to keep the kids home. Now that my youngest is starting college it feels a little different this year. Although it's not a standard 8 - 3 day and he's no longer playing sports, we are still busier than ever. He'll be taking classes four days a week plus working, and my full time job is keeping me on my toes. That's why I love to have simple and delicious meals like this Chicken Fajita Pasta at the ready to get dinner on the table fast!

One of my favorite products to always have on hand is Tyson® Grilled & Ready® Refrigerated Chicken Breast Strips found in the refrigerated meat aisle at Walmart. Made with white-meat chicken, it's 98% fat free and fully cooked and ready in minutes for a wholesome, tasty meal. Not only do I use it in dishes like this pasta, but it's perfect in quesadillas, wraps, nachos, and so much more!

This Chicken Fajita Pasta recipe calls for just a handful of ingredients and comes together in just 30 minutes. It truly is the perfect back to school weeknight meal! It's full of chicken, delicious veggies, and pasta, making it a meal the whole family will love. I use frozen fajita veggies and canned tomatoes, making prep super simple. It's also made in one pan, so clean up is a cinch!

Chicken Fajita Pasta

Serves 4

Ingredients:
2 Tablespoons olive oil
16 ounce package frozen fajita blend vegetables
1 envelope taco seasoning
2 cups chicken broth
1 can diced tomatoes
3 cups dried penne pasta
Salt and pepper, to taste
Cotija cheese and chopped cilantro, if desired

In a large skillet, heat the olive oil over medium-high heat. Add the vegetables and taco seasoning and cook, stirring occasionally, until the veggies are tender.

Add the broth, diced tomatoes and uncooked pasta. Stir to combine and bring to a boil, then reduce the heat to medium-low and cover. Cook for about 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed. Add the chicken to the skillet and stir to combine until heated through, about 2-3 minutes. Season to taste with salt and pepper. Garnish with crumbled cotija cheese and fresh chopped cilantro, if desired.

I know it's only July and we are still in the thick of summer, but it's time to start thinking about the kids going back to school. I know, I know, it's early, but it will be here before we know it! I love shopping at Walmart because they have great deals on everything I need to prepare simple, quick, and delicious meals at home, especially Campbell Soup Company products. Take this Mexican Chicken Tortilla Casserole for example. You may think this looks time consuming to make, but it's not! It can also be made ahead of time which is a huge time saver.

Summer is in full swing here. It's been in the high 80's/low 90's for over a week, which is really warm for Michigan in June. I've been soaking up all the sun I can and loving how late it stays light out. That's a food bloggers dream to have so many hours of daylight, but I also love it because it means more time for the kids and I to spend outdoors. Even though my son graduated last week, we are still busy as ever. We have several graduation parties to attend over the next several weeks, plus we are planning his graduation party at the same time. There is still so much to do! Landscaping to do, food to buy, picture boards to be made...there isn't enough time in the day to get everything done! No matter how busy we are, I still like to make home cooked meals for dinner. Now that the weather is nice I've been turning to my grill almost nightly. Grilling is so simple and there's less clean up, too.

Happy Monday, friends! So Cinco de Mayo is just a few weeks away and I don't know about you, but I'm getting excited! You all know how much I love Mexican food, and each year I got all out and plan a big celebration for my family and close friends. We eat delicious food, drink, talk, laugh, and just straight up have a good 'ole time. It's definitely one of my favorite days of the year!
Cinco de Mayo falls on a Friday this year which gives us even more reason to celebrate. We can keep our party going all night long! I've already started menu planning and have been experimenting with some new recipes lately. These Chicken and Corn Empanadas were a hit with my kids and they've received a top spot on my Cinco de Mayo menu. They are simple to make and are so flavorful and delicious. And no forks are required to eat them, so that's a bonus!

At the start of a new year we see everyone making resolutions. Resolutions to lose weight, to eat better, to exercise more. I used to be one of those people too, but a couple of years ago I gave up “resolutions,” and instead just gave myself attainable goals. One goal is to drink more water, so I have a big reusable bottle with me at all times and I aim to drink three of those in a day. Another goal is to eat more fruits and veggies, so each week when I go grocery shopping I pick up my favorites and go right home and prep them so they’re easily accessible when I feel like snacking. Of course I would love to exercise more, but the truth is I really hate exercising. I’ve given myself a goal to just get more physical activity. Period. I do enjoy walking, so I asked for a new pair of really nice walking shoes for Christmas (which I did get!), so I’m off to a good start already.

This year I’m adding a lunch revamp to my goal list. Since I primarily work from home, I find myself either eating “snacks” for lunch, sometimes leftovers, and occasionally cereal. I know, that’s ridiculous! I’ve decided to plan better so that I can enjoy a healthy, hearty, and nutritious meal for lunch, and one that will give me energy and get me through the rest of my day.

We are definitely in the thick of winter here in Michigan. Other than a couple of near 40 degree days, it's been pretty darn cold. We've had some snow, some rain, and most recently freezing rain. Sounds fun, right? When the weather is like this, I hibernate inside and do my favorite thing - I cook and bake. What's better than warming up the house with the heat from the oven, and making it smell good too?

This dish is my take on the Red Gold® slow cooker version of chicken burrito bowls. Using shredded rotisserie chicken saves a ton of time and everything cooks in one pan in about 15 minutes. I take another shortcut by using precooked rice that just needs to be warmed up for a few minutes in the microwave. Dinner can be on the table in less than 30 minutes!

It's been rainy and chilly here in Michigan the last few days. When I say "chilly" I mean like 60 degrees. I know 60 isn't really cold, but with the dampness and rain it just feels kind of gross. At least it's been a good excuse to pull out my sweaters! With weather like this I've been in the mood for comfort food and baking. I've made chili, a big pot of pasta, cookies and bread. There is nothing quite like baking when it's chilly outside!

Although Fall is knocking on our doors, I haven't given up on summer yet. The temps have still been pretty warm here in Michigan and although I'm excited to start wearing my boots and sweaters, I'm still hanging on to summer by a thread. This year I splurged and bought myself a beautiful dining set for my deck, and that's been one of my favorite spots these last few months. I eat out there, have my morning coffee, and even do a little work. It's just the perfect spot to sit and relax and take in the nature around me.

Along with my pretty dining set I've got my trusty grill. I don't know about you, but I will grill up until the time it snows. I'm not afraid of a little cold air! Food seems to taste more delicious when it comes from the grill, plus clean up is a cinch.

Let's celebrate, it's officially summer! No more school for the kids! We can stay up late and sleep in! {Well the kids can, not me} No more packing lunches every day! You know what though? Even though there aren't any more lunch boxes to be packed, lunch still needs to be made. What a bummer, huh? I was hoping to let that one slide, but the kids didn't really agree. Haha!

Everyone should know by now that I am the queen of quick weeknight meals. With everything that we all have going on, I need to get something on the table fast, but I also want it to be delicious and good for us. Lately my slow cooker has been my best friend, but I also really love skillet meals. One dish, less mess, everything cooks in one pan. Skillet meals are also great this time of year because I hate turning on my oven when it's hot out!

So I recently discovered the new Tyson® Individually Frozen Thin Sliced Boneless Skinless Chicken Breasts at Walmart. There are so many things that I like about them, but for starters I love the fact that you can take out whatever you need and just toss the rest back in the freezer. Plus, they don't need to be thawed! You can throw them on the grill or in your skillet in their frozen state and they cook up beautifully. They also boast 21 grams of protein and are all natural.

So, how are you all doing on the goals you set for yourselves at the start of the new year? {I don't like using the word resolutions!} As for me, I fell off the wagon a bit. Getting more rest, drinking more water and eating more fruits and veggies are definitely in check. But lately I've been stumped by the exercise part. 

First off, I just don't like to exercise. I know, I know, that's not good! I've been doing yoga which I still enjoy, but I really want to get into a walking routine. The weather started to get nice here in Michigan and then WHAM! It snowed and got cold again. Really? I mean come on Mother Nature, it's April! Let's get this show on the road. Warmer temps and sunshine motivate me to get outside and go for a walk. Snow flurries and 30 degrees do not!

After going on and on last week about how much I love soup in the winter, I just had to share one of my favorite chili recipes. Don't get me wrong, I love traditional beef and bean chili, but I absolutely adore this White Chicken Chili. Simple ingredients, super flavorful, and a little bit of kick. Now that's MY kind of dish!

I had a terrible, mean, nasty cold bug last week and this chili totally hit the spot for me. So much so that I made a double batch and ate it for lunch several days in a row. It was warm and comforting on my throat and the spice was good for opening my head up.

It's a pretty well known fact that I am not a big fan of winter. I say it every year as the temps drop and the snow starts to fall. But I've lived in Michigan my whole life, my family is here, and really there isn't anywhere else I'd rather be. So I sort of hibernate during the winter, staying inside baking and cooking and watching my favorite sports in favor of going out in the cold.

One of my favorite things about winter though is definitely the food. I love comfort food, and there isn't much that's better than a big bowl of soup or a hearty casserole for dinner on a cold night. Chicken pot pie is a dish I dearly love. It reminds me so much of my childhood, and this Chicken and Buttermilk Biscuits is my new spin on that beloved dish.

No matter the time of year, I'm always in the mood for pizza. It's part of our weekly routine to get pizza delivery sometime during the weekend, whether it's Friday or Saturday night depends on our schedules. I really enjoy making homemade pizza too, so sometimes I'll do that instead. I enjoy changing the toppings up - it could be just cheese or pepperoni, other times I'll make BBQ Chicken or Chicken Alfredo. It's fun to put some twists on the traditional toppings.

Recently I decided to create a new pizza that symbolized Fall. Not the usual pumpkin, sweet potato, apple flavors that I've been working with a lot lately. I wanted something different. Going with cranberry was the best decision I made for this pizza! Delicious cranberry sauce is the base, topped with shredded chicken, walnuts, crumble of goat cheese and fresh rosemary. That pizza has Fall written all over it!
