Chili is definitely one of my most favorite dishes to cook during the cold winter months. Not only does it warm you up, but it warms up the house and smells amazing while it's simmering away on the stove. I've made a lot of pots of chili over the years, from the traditional beef chili to white chicken chili and so much more. Recently I gave my chili a smoky kick with the addition of chipotle powder and it was a huge hit with my family. The chipotle adds a little bit of spice, but a lot of richness and flavor.

After going on and on last week about how much I love soup in the winter, I just had to share one of my favorite chili recipes. Don't get me wrong, I love traditional beef and bean chili, but I absolutely adore this White Chicken Chili. Simple ingredients, super flavorful, and a little bit of kick. Now that's MY kind of dish!

I had a terrible, mean, nasty cold bug last week and this chili totally hit the spot for me. So much so that I made a double batch and ate it for lunch several days in a row. It was warm and comforting on my throat and the spice was good for opening my head up.

Chili is one of my all time favorite meals during the winter. You just can't beat the warm spices and flavor packed bites on a cold day. I always serve cornbread or cornbread muffins alongside my chili, but I decided to kick things up a notch and make a skillet cornbread and chili pie. Because why wouldn't two of my favorites be combined into one dish? It's a win-win!

This dish is so amazingly simple to put together. One skillet is all you need to make a hearty, homemade chili smothered with ooey gooey cheese and a tender cornbread top. Just thinking about it makes me hungry!

A few weeks ago I had a wonderful opportunity to go on a Family Farm Tour with Red Gold Tomatoes in Indiana. Between visiting their headquarters, a tomato farm, and two of their processing plants, it was an exciting and busy few days! I learned so much about tomatoes, the Red Gold company, and the family that started it in 1942, and who continues to run the company today. They are amazing people and are truly passionate about their mission: "To Produce the Freshest, Best Tasting, Tomato Products in the World.”

Our first adventure of the trip was to visit Triple "S" Farms. They were harvesting tomatoes that day, so we were able to sneak a peek of how everything works! Back in the day they used to pick the tomatoes by hand, but now everything is done by a machine. You can see in the picture below they use a tractor with large "claws" that dig up the tomato plant and feed it onto a conveyor belt.  The tractor shakes the vines to remove the dirt, then sends the tomatoes out of a chute at the top of truck, into another truck that is driving along side the tractor.  It was such an interesting process!

It's that time again. When fall rolls around it's time to bust out the stew and chili recipes. I don't know about you, but I love making those dishes in the fall and winter. They are just so warm and comforting!

I've been experimenting with different recipes lately and trying to eat healthier. We've been doing this for a few months now and it's going great. I've finally gotten my youngest son to try new things, which is a huge feat! He was so picky for awhile there that he wouldn't try anything new, especially if it looked weird or was a different color. Ha!
