It's hard to believe that Christmas has come and gone and the new year is right around the corner. Trust me, I'm ready to kick 2020 out the front door but man, the year really did fly by! Our NYE will be pretty chill, no fancy parties or going out for us. Instead, our little family will be staying home and enjoying a spread of our favorite appetizers, drinks and dessert while watching sports and movies in our pjs all day. I'll be whipping up these decadent molten lava cakes to make our night even more special!
These indulgent little desserts are cakey on the outside with a center of warm chocolate oozing through the middle. I love how easy they are to make and how quickly they come together! Of course we can't forget to top our cakes with a scoop of our favorite ice cream to really take this dessert to the next level. Ice cream can make the most wonderful time of year sweeter and more special when you're sharing a scoop with someone you love, don't you agree? Molten Lava Cakes
Ingredients
- 1 stick unsalted butter
- 1 cup milk chocolate chips
- 2 eggs
- 2 egg yolks
- 1/2 teaspoon pure coffee extract
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 2 Tablespoons flour
- 48 oz. carton Hudsonville Creamery Blend Vanilla Ice Cream
- 48 oz. carton Hudsonville Traverse City Cherry Fudge Ice Cream
Instructions
- Preheat the oven to 425 degrees. Butter and lightly flour four ramekins, tapping out the excess flour. Set the ramekins on a baking sheet.
- Add the butter and chocolate chips to a small saucepan and melt over medium-low heat, whisking until the chocolate is smooth. Remove from the heat and add the coffee extract.
- In a medium bowl, beat the eggs, egg yolks, sugar and salt until pale in color. Slowly fold the chocolate into the egg mixture and mix until combined. Add the flour.
- Spoon the batter into the prepared ramekins and bake for 14 minutes, or until the sides of the cakes are firm but the centers remain soft. Let the cakes cool in the ramekins for 1 minute, then carefully turn each one over onto a plate. The ramekins will still be hot so be careful! Top each cake with ice cream and serve immediately.
