Hello, friends! How was your Christmas? I know this holiday looked a bit different for many of us this year, but I hope you had a wonderful day no matter what you did or who you spent it with. Our celebration was small and intimate; just me, my parents and my youngest son. This was the first Christmas day that I didn’t get to be with my oldest son which, I'll be honest, felt really weird. I knew this day would come eventually, I mean that’s what happens when your children grow up. Thank goodness for modern technology and FaceTime!

It's hard to believe that Christmas has come and gone and the new year is right around the corner. Trust me, I'm ready to kick 2020 out the front door but man, the year really did fly by! Our NYE will be pretty chill, no fancy parties or going out for us. Instead, our little family will be staying home and enjoying a spread of our favorite appetizers, drinks and dessert while watching sports and movies in our pjs all day. I'll be whipping up these decadent molten lava cakes to make our night even more special!

Molten Lava Cakes

Ingredients

• 1 stick unsalted butter
• 1 cup milk chocolate chips
• 2 eggs
• 2 egg yolks
• 1/2 teaspoon pure coffee extract
• 1/4 cup granulated sugar
• 1/4 teaspoon salt
• 2 Tablespoons flour
• 48 oz. carton Hudsonville Creamery Blend Vanilla Ice Cream
• 48 oz. carton Hudsonville Traverse City Cherry Fudge Ice Cream

Instructions

1. Preheat the oven to 425 degrees. Butter and lightly flour four ramekins, tapping out the excess flour. Set the ramekins on a baking sheet.
2. Add the butter and chocolate chips to a small saucepan and melt over medium-low heat, whisking until the chocolate is smooth. Remove from the heat and add the coffee extract.
3. In a medium bowl, beat the eggs, egg yolks, sugar and salt until pale in color. Slowly fold the chocolate into the egg mixture and mix until combined. Add the flour. 
4. Spoon the batter into the prepared ramekins and bake for 14 minutes, or until the sides of the cakes are firm but the centers remain soft. Let the cakes cool in the ramekins for 1 minute, then carefully turn each one over onto a plate. The ramekins will still be hot so be careful! Top each cake with ice cream and serve immediately.
