Let's celebrate, it's officially summer! No more school for the kids! We can stay up late and sleep in! {Well the kids can, not me} No more packing lunches every day! You know what though? Even though there aren't any more lunch boxes to be packed, lunch still needs to be made. What a bummer, huh? I was hoping to let that one slide, but the kids didn't really agree. Haha!
I like to serve different things for lunch, not the same ole', same ole'. That can get pretty boring and eventually the kids get a little antsy for something new. These BBQ Chicken Flatbread Pizzas are our new favorite. They are simple to make and super delicious, which makes them the perfect summertime meal.
I buy a rotisserie chicken from the store just about every week. It's great for so many things, and it's just really helpful to have precooked chicken on hand for whenever I need it. That's the key to making these flatbread pizzas in a flash - we use shredded rotisserie chicken!
The rich and tangy BBQ sauce paired with the onions and melty cheese is right up my alley. But of course you can easily change the toppings and make your own signature flatbread pizza. Go ahead, get creative!
BBQ Chicken Flatbread Pizzas

Serves 2
Ingredients:
1 1/2 cups shredded rotisserie chicken
1/2 cup finely chopped red onion
1/2 cup barbecue sauce
1/4 cup low sodium chicken stock
2 flatbread pizza crusts (I used Flatout Rustic White Artisan Thin Pizza Crust)
1 cup shredded cheddar jack cheese
Chopped green onions, for garnish
Preheat the oven to 375 degrees.
To a medium saucepan add the chicken, red onion, barbecue sauce and chicken stock. Cook for 5-7 minutes, or until the mixture is heated through. Remove the pan from the heat and set aside.
Place the flatbread crusts directly on a rack in the oven and bake for 2 minutes. Carefully remove them and place them on a baking sheet. Top the two crusts evenly with the chicken mixture. Sprinkle 1/2 cup of the cheese on each pizza. Place the sheet in the oven and bake for 8 minutes. Immediately top the pizzas with the chopped green onions. Cut each pizza into 4 pieces and serve.
