At the start of a new year we see everyone making resolutions. Resolutions to lose weight, to eat better, to exercise more. I used to be one of those people too, but a couple of years ago I gave up “resolutions,” and instead just gave myself attainable goals. One goal is to drink more water, so I have a big reusable bottle with me at all times and I aim to drink three of those in a day. Another goal is to eat more fruits and veggies, so each week when I go grocery shopping I pick up my favorites and go right home and prep them so they’re easily accessible when I feel like snacking. Of course I would love to exercise more, but the truth is I really hate exercising. I’ve given myself a goal to just get more physical activity. Period. I do enjoy walking, so I asked for a new pair of really nice walking shoes for Christmas (which I did get!), so I’m off to a good start already.

This year I’m adding a lunch revamp to my goal list. Since I primarily work from home, I find myself either eating “snacks” for lunch, sometimes leftovers, and occasionally cereal. I know, that’s ridiculous! I’ve decided to plan better so that I can enjoy a healthy, hearty, and nutritious meal for lunch, and one that will give me energy and get me through the rest of my day.

It's been rainy and chilly here in Michigan the last few days. When I say "chilly" I mean like 60 degrees. I know 60 isn't really cold, but with the dampness and rain it just feels kind of gross. At least it's been a good excuse to pull out my sweaters! With weather like this I've been in the mood for comfort food and baking. I've made chili, a big pot of pasta, cookies and bread. There is nothing quite like baking when it's chilly outside!

I ate a lot of BLT's growing up and it's still one of my favorite sandwiches today. What could be better than toasted bread, crispy bacon, juicy tomatoes and soft lettuce? In my mind, not much! To be honest, everything is just better with bacon, am I right? My family eats bacon often, whether it's served with pancakes for breakfast, on a sandwich, or in this salad. I can't seem to get enough of it!

Even though I'm usually pressed for time, it IS the most important meal of the day so I try to eat at least a little something. I've been a huge fan of avocado toast for a long time, and my newest guacamole toast creation has become my go-to breakfast on busy weekdays.

School is back in session for my kids, which means it's back to packing lunches for mom! I really do enjoy making lunches for the boys. My oldest, who's taking classes at the community college this semester, loves for me to pack him a lunch a few times a week. He says it's so much healthier, and a lot cheaper! And my youngest, who plays sports about half of the year, loves eating healthy too. He tells me he just can't eat that cafeteria food every day! So just like my parents did for me, I try to create fun and delicious lunches for my guys.

My mom did most of the lunch making when I was growing up, but my dad would occasionally take over the duties. His favorite thing to make me was a peanut butter and cheese sandwich. I know what you are thinking...that sounds gross! But it was actually quite good. I haven't had one in years, but I think I may need to have one again soon!

I don't know about you, but I'm having a really hard time believing that summer is almost over and school is right around the corner. My sons go back to school in less than two weeks...how is that possible? Isn't it still June? *insert BIG sigh here*

It seems like summer just started, and here we are printing school schedules, buying supplies, and getting wardrobes figured out. I am so not ready for this! Of course with all of this comes the task of packing lunches. My youngest son is still in high school and tries really hard to eat healthy most of the time. {Which means he doesn't want to eat cafeteria food every day!} I aim to pack his lunch at least three times a week, and I'm always trying to change things up for him so he doesn't get bored.

I love a good salad. Especially in the spring and summer. I'm obsessed with eating salads with tons of fresh, in season veggies. Sometimes I pile on the goodies, even adding chicken or tuna to make it more hearty, and other times I go the simpler route. 

This Kale Caesar Salad is just that. Simple. Fresh kale, homemade croutons, Parmesan cheese, and a homemade dressing. That's it. And really, that's all you need. This has been my go-to lunch for the last week. I just can't get enough!

I'm seriously considering starting a weekly feature on the blog for lunch recipes. Especially lunches for one. Since I've worked from home for so long, I'm used to eating lunch alone. Some days it's just a turkey sandwich, some days it's a bowl of cereal (yes, it's true), but other days I'm craving a nice, hearty lunch. Something delicious and healthy, but not too difficult or time consuming to make. 

Last month I shared one of my favorites, this Rigatoni with Kale and Tomatoes in Brown Butter. I literally could eat that dish every single day. It's that good. But because I like variety, I thought I'd create a few more easy lunches to have on hand.
