So, how are you all doing on the goals you set for yourselves at the start of the new year? {I don't like using the word resolutions!} As for me, I fell off the wagon a bit. Getting more rest, drinking more water and eating more fruits and veggies are definitely in check. But lately I've been stumped by the exercise part. 

First off, I just don't like to exercise. I know, I know, that's not good! I've been doing yoga which I still enjoy, but I really want to get into a walking routine. The weather started to get nice here in Michigan and then WHAM! It snowed and got cold again. Really? I mean come on Mother Nature, it's April! Let's get this show on the road. Warmer temps and sunshine motivate me to get outside and go for a walk. Snow flurries and 30 degrees do not!

To get myself into the spring/summer spirit, I whipped up some delicious Caribbean Chicken Tacos with Mango Slaw. Tropical flavors make me think of the beach, sand, and ocean and take me to my happy place. Plus, this dinner is bikini friendly!

Other than the traditional pantry staples, I got everything I needed for this meal in my weekly Door to Door Organics {DTDO} delivery. I've gushed over DTDO before, but I just love the fact that I can buy almost anything I need from the grocery store from them, and it will be delivered right to my door. Grocery shopping in my pj's? CHECK! Buying good-for-you, local, organic food? CHECK! What more does one need?

Caribbean Chicken Tacos with Mango Slaw

For the Slaw:
2 cups chopped Organic Green Cabbage
Organic Mango, peeled and sliced
1/4 cup chopped Organic Red Onion
1 tablespoon fresh Organic Lime juice
1/2 teaspoon sugar
2 teaspoons chopped fresh Organic Cilantro
1/4 teaspoon salt
1/4 teaspoon pepper

For the Tacos:
2 Tablespoons olive oil
1 pound Organic Boneless Skinless Chicken Breast, sliced
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground chipotle chili pepper
1/4 teaspoon salt
1 Organic Red Bell Pepper, cut into thin slices
1 cup thinly sliced Organic Red Onion
8 6-inch Corn Tortillas
1 cup Queso Fresco cheese

First, prepare the slaw. Gently toss all of the ingredients together until well combined. Refrigerate until ready to use. 

Heat a tablespoon of the oil in a large cast iron skillet over medium-high heat. In a small bowl mix the chili powder, cumin, chipotle and salt. Sprinkle the mixture over the chicken evenly, then add it to the pan. Cook for about 6 minutes, until the chicken is no longer pink. Move the chicken to the outside of the pan, then add the other tablespoon of oil. Add the bell pepper and onions and cook another 5-6 minutes, until the vegetables are crisp-tender and the chicken is cooked through.

Warm the tortillas according to the package directions. Arrange some of the chicken mixture in the center of each tortilla, followed by a couple of tablespoons of the slaw, then the Queso Fresco. Repeat to make the remainder of the tacos.
