Hi friends! I hope you all had a wonderful Thanksgiving! It's hard to believe it's come and gone, and now we are switching gears and getting into Christmas mode. We got our tree up this weekend and I'm slowly working on decorating the rest of the house. I've also been baking up a storm to get a head start on my holiday baking. Anyone else doing the same?

Homemade ice cream is my jam. Ever since my boys gifted me with an ice cream maker for Mother's Day several years ago, I've been spending my summers whipping up all sorts of delicious frozen treats. From ice cream to frozen yogurt and even sorbet, the possibilities are endless with this machine. Since July is National Ice Cream Month, I couldn't let it pass by without sharing a few of my favorite recipes! This Mint Chocolate Chunk ice cream is a family favorite in my house, and baking up a batch of fresh chocolate wafer cookies and turning them into ice cream sandwiches was the best idea I've had in a long time.

I spent last weekend pulling out all of my Halloween decorations and sprucing up the house, which is just about my favorite thing to do ever. I absolutely love this time of year! It finally really and truly feels like Fall here in Michigan. The mornings have been quite chilly, in the 40's, and the afternoons have been in the mid 60's or so. Thankfully the sun has been shining brightly, and the leaves are starting to turn beautiful colors! This type of weather is perfect for walks outside, bonfires, and of course, football!

It's also perfect for baking. No one is ready to turn the heat on yet, (come on, October just started!) so I like to warm up my house with the heat from the oven. Whether I'm baking a casserole, a breakfast bake, or a dessert, I love the warmth and wonderful smells that come from my kitchen this time of year. And pumpkin just happens to be one of my all time favorite scents!

Although the weather has been very hot and humid here in Michigan this past week, I'm already getting into the Fall spirit. I mean, it's September! Which means I need to cook and bake all things pumpkin. And put out of all of my pumpkin candles. And drink pumpkin spice lattes. Okay, okay, you get my point.

In all seriousness though, I created a new cookie that I am absolutely in love with and it's perfect for Fall! Basically I took our favorite chocolate chip cookies and added cinnamon and toasted pumpkin seeds. Toasted pumpkin seeds are the bomb ya'll. For reals. Toasting them really brings out the flavor, plus they give an awesome crunch to the cookies. And honestly, I feel just a tad bit healthier eating these cookies knowing that there are pumpkin seeds inside! They just happen to be heart healthy and contain a lot of different nutrients, including magnesium, protein and zinc.

I've had cookies on the brain lately. I'm like the cookie monster...me want COOKIE! So I went and developed a new recipe. A recipe containing two of my favorite things...peanut butter and chocolate. I mean, who doesn't love them, right? Especially the combination of the two. Together they are freakin' amazing.

This is a very simple recipe. A basic peanut butter cookie recipe with some delicious milk chocolate chips mixed in. I added a lot of peanut butter in there, so the cookies are super peanut buttery. Is that even a word? Soft and chewy, I bet you can't eat just one!

These Chocolate Chip Bars are like a cookie, but also a bit like a cake. I know, I know, that sounds weird! But by using cake flour the bars puffed up and became crispy on the edges and soft in the center. Filled with milk chocolate chips they are ooey, gooey and just down right delicious. The kids and I loved dunking them in a cold glass of milk, just as you would a cookie. They are also good with a scoop of vanilla ice cream on top. Not that I tried that myself. Nope, not me.

I'm definitely a sweet breakfast kind of person. Don't get me wrong, I love eggs or a good omelet from time to time, but on any given day I would cheese pancakes, waffles, doughnuts, etc. over the savory choices.

I also love to have sweets with my cup of morning coffee, as do many others. I've been known to pull out a slice of cake or brownie and have it for breakfast. (I know, I know, that's not good!) But I just can't help myself.

Do you like your cookies soft and fluffy, or thin and crispy? I like both, depending on what kind of cookie it its. Gingersnaps, for example, should be thick and crunchy. Oatmeal cookies should be soft. But chocolate chip cookies, well they can go both ways.

This has seriously been the LONGEST. WINTER. EVER. I'm sure most of you agree! Here in Michigan we've gotten so much snow and ice and it's been so cold. But finally, it's actually starting to warm up a bit.

By warming up I mean 30's to low 40's. I know it doesn't seem like much, but it's a heatwave compared to what it's been! And the sun has been shining, so that's a huge plus. I definitely need my Vitamin D.

Lately I've been daydreaming about spring which has caused me to whip up some fun things in the kitchen. Things that remind me of spring and summer, like these Chocolate Chip S'Mores Cookie Cups. All the flavors of delicious s'more, but in a bite sized cookie cup. No campfire needed, just your oven.

These Mint Chocolate Chip Cookies just might be my new favorite cookie. I love the traditional chocolate chips, but adding cocoa and mint morsels really makes it feel like the holidays. 

These are the perfect winter cookies, and I find they go best with a cup of hot cocoa, or even some coffee. Of course they can be dunked in a big glass of milk too.




Skillet Chocolate Chip Cookie

The other day it was cold and rainy outside and I wanted comfort food. Sweet comfort food to be exact. And I wanted to bake. Baking always warms me up and makes me happy.

So I decided to concoct a skillet chocolate chip cookie. I've made a skillet brownie before, but never a cookie. And it sounded so good! The perfect dessert for the boys and I to share.

So I made it....it was delicious...and the boys and I devoured it.

Pumpkin Chocolate Chip Bundt Cake

Since the weather has cooled off around here I'm in full fall decorating, sweater wearing, pumpkin baking mode. I've got three pumpkin recipes to share with already, and I'm sure there will be more to come!

This pumpkin chocolate chip bundt cake is a spin off of the mini double chocolate bundt cakes I made earlier this year. Adding canned pumpkin and pumpkin pie spice gives this delicious chocolate cake just the right kick. If you don't remember the mini cakes, you can find the recipe here.

Chocolate chunk coffee muffins...what more is there to say? Anything with both chocolate and coffee in it MUST be good. These muffins are amazing. Moist and tender, and full of flavor from espresso powder and chunks of chocolate. Even my 15 year old son likes them. I told him I think he is going to grow up and be a coffee lover just like his mom. Really, that's not a bad thing. {Side note, he is now 20 and LOVES coffee just as much as I do!}
