Baking is my love language. It's truly  my favorite way to show my friends and family how much I care about them. Don't get me wrong I enjoy cooking too, but baking is my true passion. With the holidays quickly approaching I've been in the kitchen baking up some old favorites as well as a trying out a few new treats. These Beet Chocolate Chunk Cookies just happen to be one of the new recipes that I can't get enough of!

Hi friends! I hope you all had a wonderful Thanksgiving! It's hard to believe it's come and gone, and now we are switching gears and getting into Christmas mode. We got our tree up this weekend and I'm slowly working on decorating the rest of the house. I've also been baking up a storm to get a head start on my holiday baking. Anyone else doing the same?

Spring has sprung and with it comes a couple of my favorite special occasions - Easter and Mother's Day! I celebrate both days with my family and love to host dinner and serve light and fresh dishes. Of course we can't forget about dessert, and these Apricot Linzer Cookies are at the top of my baking list! Linzer cookies are a classic cookie, originating in Austria. They are typically made during the holidays, but I love to make them all year round for special occasions. While the recipe has a few steps, it's nothing too difficult and the cookies are absolutely worth it.

It may not feel like it, but spring really is just around the corner! The first official day of spring is this coming Monday, but as I sit here and type this there is snow falling and it's about 30 degrees outside. Maybe Mother Nature is confused. Doesn't she know that it usually rains in the spring, not snows? Living in Michigan I never expect anything because well, it's Michigan. Weather can change hourly here.

While most people think Valentine's Day is synonymous with chocolate, I believe there are many more sweet treats to enjoy that aren't of the chocolate variety. I recently realized that although I post a lot of desserts and baked goods, I really don't have that many cookie recipes on the blog. I tend to share cookie recipes around the holidays, but that's it. My dear friends, that is going to change! I love cookies, and so does my family, and I do make them frequently. Instead of keeping my favorites to myself, I am going to spread the love!

Growing up I baked a lot with my mom and grandmothers, and Oatmeal Raisin Cookies were always a staple. I like mine soft and tender, with lots of raisins and cinnamon. Not only do they taste good, but they make the house smell amazing as well! I decided to revamp my recipe to make these cookies even softer, by using Stonyfield Greek Yogurt in place of some of the butter. Boy did they turn out incredible! The combination of the Greek yogurt with my favorite King Arthur All-Purpose Flour made these cookies light and tender. And I found it quite hard to stop eating at just one or two.

To me, ice cream is synonymous with summer. It's a staple in our house all year round, but during the summer we really go all out. If we aren't eating a bowl of homemade ice cream, then we are going out to our favorite local ice cream parlor for a cone or sundae. It is definitely one of our favorite desserts, and one of the simplest as well.

My kids love homemade ice cream, but their absolute favorite is when I make ice cream sandwiches. They can be made in so many ways, so many combinations, that there is something for everyone. These Snickerdoodle Cookie Cinnamon Pecan Ice Cream Sandwiches just happen to be the new family favorite!

Easter is just 10 days away! I can't believe the month is going by so fast. Wasn't it just New Years Eve? Spring is definitely coming soon too and I can hardly wait! After a couple of huge snowstorms here in Michigan, the snow has melted and I can actually see somewhat green grass now. Plus the temps have been getting into the 50's lately which is awesome! Easter eggs hunts are best done when it's not freezing out.

To celebrate the coming of Spring and Easter, I made these delicious M&M's® Marshmallow Cream Cookie Sandwiches for my friends and family. Fluffy and sweet marshmallow cream gets stuffed between two of the most amazing M&M's® cookies I have ever made. They are incredibly soft and make a great vessel for that decadent marshmallow cream!

I'm super excited to be participating in the Great Food Blogger Cookie Swap again this year!  This is the 5th annual swap, and my 3rd year to participate. It's seriously one of my favorite things about the holiday season! The swap partnered up with Cookies for Kids' Cancer, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer. I love being able to get in the kitchen and bake AND support this great cause! 

The swap is simple – I baked 3 dozen cookies to send to three of my fellow food bloggers (one dozen to each), and in return I received one dozen cookies from 3 other food bloggers! Each year for as long back as I can remember, my mom and I have had a holiday cookie baking day. We each gather our favorite recipes, some new, some old, and spend an entire day in the kitchen together. When my boys were younger this included them as well, rolling out and decorating their beloved sugar cookies. Now that they've gotten older they don't help as much, but I still get them in the kitchen a little by bribing them with treats. Don't judge, it works! 

I love making something special for my mom and I to drink and snack on as we bake away. Some years it was hot chocolate and doughnuts, others it was coffee and a homemade coffee cake, but this year I created something new. I made us Caramel Macchiatos with Double Chocolate Biscotti! The biscotti are chocolaty, crunchy, and perfect for dunking in the creamy, caramely Macchiato. YUM!

Being the little baking queen that I am, I love coming up with new and creative dessert recipes. Although I mostly bake from scratch, from time to time I really enjoy taking a baking mix and putting my spin on it and turning it into something new. Take these Loaded Brownie Cookies, for example. I started off with a brownie mix, added a little of this, a little of that, and came up with these fabulous cookies. Tender and chewy like a brownie, but in cookie form. My family has been going crazy over them!

Are you familiar with the Pillsbury Purely Simple mixes? I recently ran across them at the store and decided to try them out. The mixes contain no artificial colors, no preservatives, and no bleached flour. They use purely simple ingredients. Sounds pretty great to me!

We're a few days into October, which means Halloween is just around the corner! I spent last weekend pulling out all of my Halloween decorations and sprucing up the house, which is just about my favorite thing to do ever. I absolutely love this time of year! Although the weather has been very hot and humid here in Michigan this past week, I'm already getting into the Fall spirit. I mean, it's September! Which means I need to cook and bake all things pumpkin. And put out of all of my pumpkin candles. And drink pumpkin spice lattes. Okay, okay, you get my point.

In all seriousness though, I created a new cookie that I am absolutely in love with and it's perfect for Fall! Basically I took our favorite chocolate chip cookies and added cinnamon and toasted pumpkin seeds. Toasted pumpkin seeds are the bomb ya'll. For reals. Toasting them really brings out the flavor, plus they give an awesome crunch to the cookies. And honestly, I feel just a tad bit healthier eating these cookies knowing that there are pumpkin seeds inside! They just happen to be heart healthy and contain a lot of different nutrients, including magnesium, protein and zinc.

I've had cookies on the brain lately. I'm like the cookie monster...me want COOKIE! So I went and developed a new recipe. A recipe containing two of my favorite things...peanut butter and chocolate. I mean, who doesn't love them, right? Especially the combination of the two. Together they are freakin' amazing.

This is a very simple recipe. A basic peanut butter cookie recipe with some delicious milk chocolate chips mixed in. I added a lot of peanut butter in there, so the cookies are super peanut buttery. Is that even a word? Soft and chewy, I bet you can't eat just one!

The weather has been absolutely amazing so far this week! Lots of gorgeous sun and high 40 degree temps are making it feel like Spring. I know it's not here yet, but it's oh so close. A lot of the snow is melting and the grass is beginning to show, a sign of good things to come.

With the spring weather comes spring food. I can hardly wait to grill out and eat lots of fresh, local fruits and veggies. For now though, I'm making some spring themed desserts to get me in the mood.

One can never have enough cookies during the holidays. Amiright? Yes, I am! I have a long list of family favorites that I bake each year, but I also love to create new recipes too. These Candy Cane Cocoa Blossoms are my latest treat and they've been a hit with everyone that's tried them so far.

A twist on the traditional peanut butter blossom, this has a chocolate cookie base and candy cane kisses in the center. To me it tastes just like peppermint hot chocolate! Whip up a batch of these cookies for your family or package them up and give them to friends. The recipe is simple and would be fun for a cookie exchange party too!


Pumpkin Whoopie Pies with Salted Caramel Filling

I'm not really a pie person, cakes and brownies are for sure my favorite desserts. But there is one pie that is hands down my favorite, and I would eat it any chance I get. That is pumpkin pie. I love pumpkin anything, but a slice of homemade pumpkin pie with a dollop of fresh whipped cream on top just can't be beat.

I decided to transform my favorite pie into something special, and these pumpkin whoopie pies are it. I whipped up a salted caramel filling and I'm telling you, it is amazing. And it's exactly what the whoopie pies needed to take them to the next level, over the top actually.
