Easter is just 10 days away! I can't believe the month is going by so fast. Wasn't it just New Years Eve? Spring is definitely coming soon too and I can hardly wait! After a couple of huge snowstorms here in Michigan, the snow has melted and I can actually see somewhat green grass now. Plus the temps have been getting into the 50's lately which is awesome! Easter eggs hunts are best done when it's not freezing out.

To celebrate the coming of Spring and Easter, I made these delicious M&M's® Marshmallow Cream Cookie Sandwiches for my friends and family. Fluffy and sweet marshmallow cream gets stuffed between two of the most amazing M&M's® cookies I have ever made. They are incredibly soft and make a great vessel for that decadent marshmallow cream!

I'm packaging up my M&M's® Marshmallow Cream Cookie Sandwiches to give to neighbors and friends as Easter gifts. Wrapped in a little cellophane and tied with a festive ribbon, it's a small but thoughtful gift.

Since I have two young adults in my house, I had a hard time deciding what I was going to do for them for Easter. I LOVE giving them Easter baskets, but the time has come when maybe they are just a bit too big for the traditional brightly colored woven baskets. So I decided to get creative. Which is scary when it happens haha. I made my own Easter basket using theater box candy, a bit of cardboard, glue, a cord, and Easter grass. I can't believe how easy they were to make, and I am not usually a crafty person!

Take four of your favorite boxes of theater candy and glue them together. Turn the boxes over and cut out a piece of cardboard the size of the bottom. Glue the cardboard to the boxes. Find a piece of cord or ribbon and glue it to two sides to make a handle. Fill the candy "basket" with Easter grass and top it off with your favorite MARS Spring Minis! How cute is that? Perfect for teens and young adults who think they're too big for an Easter basket!
Now, back to these cookies! Although the cookie sandwiches are decadent and delicious, you can always eat the cookies by themselves, too. They are amazing either way!

M&M's® Marshmallow Cream Cookie Sandwiches

Makes 30 cookies {15 cookie sandwiches}

Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 sticks unsalted butter, at room temperature
3/4 cup light brown sugar
1/2 cup granulated sugar
2 eggs
1/2 Tablespoon pure vanilla extract
2 cups M&M's® Pastel Chocolate Candies
1 container marshmallow cream

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silicone mat and set aside. 

In a medium bowl, whisk together the flour, baking soda and salt.  In the bowl of a stand mixer, add the butter and both sugars and beat until fluffy and pale in color. Add the eggs, one at a time, and then the vanilla. Slowly add the dry ingredients to the mixer and stir just until combined. Gently fold in the M&M's® pastel with a rubber spatula.

Using a scoop, drop the dough onto the prepared baking sheet. Bake for 9-10 minutes, or until the edges start to brown. The cookies will be slightly underdone in the center but they will set once they are cooled. Allow to cool on the baking sheet for 5 minutes, then place them on a baking sheet to cool completely. 

Once the cookies are cooled completely, turn half of them upside down and place a large teaspoonful of the marshmallow cream in the center of each cookie. Top them with another cookie, bottom side down, to make a sandwich. Gently press the cookies together so that the cream spreads to the edges.
