Chocolate chunk coffee muffins...what more is there to say? Anything with both chocolate and coffee in it MUST be good. These muffins are amazing. Moist and tender, and full of flavor from espresso powder and chunks of chocolate. Even my 15 year old son likes them. I told him I think he is going to grow up and be a coffee lover just like his mom. Really, that's not a bad thing. {Side note, he is now 20 and LOVES coffee just as much as I do!}This recipe is surprisingly very, very simple. Enjoy!

Ingredients:
2 cups flour
3 Tablespoons espresso powder
2 teaspoons baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, melted
2/3 cup granulated sugar
1 1/2 teaspoons pure vanilla extract
1 large egg
2/3 cup milk
1/2 cup chocolate chunks or chocolate chips

Preheat the oven to 400 degrees. Spray a 12-cup muffin tin with non-stick baking spray and set aside.
In a large bowl, whisk together the flour, espresso powder, baking powder, and salt. In a small bowl, whisk together the melted butter and sugar until light and fluffy. Add the vanilla and egg and whisk until combined, then add the milk.
