A crunchy, orange scented cookie filled with mini chocolate chips. These pair perfectly with a cup of coffee!
I'm definitely a sweet breakfast kind of person. Don't get me wrong, I love eggs or a good omelet from time to time, but on any given day I would cheese pancakes, waffles, doughnuts, etc. over the savory choices.
I also love to have sweets with my cup of morning coffee, as do many others. I've been known to pull out a slice of cake or brownie and have it for breakfast. (I know, I know, that's not good!) But I just can't help myself.
These Orange Chocolate Chip Biscotti are my new obsession. They are not overly sweet and have a lovely hint of orange, which is like a little surprise inside! They are absolutely perfect for dunking in my coffee, both in the morning and throughout the day when I need a pick me up.
Orange Chocolate Chip Biscotti

Ingredients:
2 cups all-purpose flour
1 1/2 tsp baking powder
Pinch of kosher salt
2/3 cup sugar
1 stick unsalted butter, at room temperature
Zest of one medium orange
1/4 tsp orange extract
2 eggs
1/2 cup mini chocolate chips
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a Silpat and set aside.
Whisk the flour, baking powder and salt in a medium bowl. In the bowl of your stand mixer, beat the sugar, butter, orange zest and orange extract until light and fluffy. Beat in the eggs, one at a time, until combined. Add the flour mixture and beat until just blended. Fold in the mini chocolate chips.
Turn the dough onto the prepared baking sheet and form it into a log about 12 inches long and 3 inches wide. Bake until light golden, about 30 minutes. Allow it to cool for 30 minutes.
Place the log on a cutting board and using a sharp serrated knife, cut the log on a diagonal into half-inch thick slices. Arrange the biscotti, cut side down, on the baking sheet. Bake at 350 until they are lightly browned, about 15 minutes. Transfer the biscotti to a rack and cool completely.
