Chocolate Chunk Coffee Muffins

Chocolate chunk coffee muffins...what more is there to say? Anything with both chocolate and coffee in it MUST be good. These are amazing. Moist, tender muffins flavored with coffee and filled with chunks of chocolate. Even my 15 year old son likes them. I told him I think he is going to grow up and be a coffee lover just like his mom. Really, that's not a bad thing.

Here's the recipe. It's surprisingly very, very simple. Enjoy!

2/3 cup milk
5 tablespoons butter, melted
3 tablespoons instant espresso powder
1 1/2 teaspoons vanilla extract
1 large egg, lightly beaten
2 cups flour
2/3 cup sugar
1/2 cup chocolate chunks
2 teaspoons baking powder
1/4 teaspoon salt

Preheat oven to 400°. Combine first 5 ingredients.

Lightly spoon flour into measuring cups. Combine flour and next 4 ingredients (through salt) in a large bowl; stir well with a whisk. Make a well in center of flour mixture. Add milk mixture to flour mixture; stir just until moist.

Spoon batter into 12 muffin cups either coated with cooking spray or use liners. Bake at 400° for 18 minutes or until done. Remove muffins from pan immediately; place on a wire rack.
