Sweet Potato and Brown Rice Bowls

These Sweet Potato and Brown Rice Bowls are hearty, nutritious, and bursting with flavor! 
It's definitely comfort food in a bowl, plus they are so easy to make!
I've always been a big fan of Mexican food. Like, an I could eat it every night of the week type of fan. Tacos, enchiladas, nachos, burritos...you name it and I love it. One of my new favorite meals is a burrito bowl. It's everything you love in a burrito, but without the tortilla and in a bowl instead. I love piling mine high with rice, beans, chicken, lots of different veggies, salsa and sour cream. The thing is huge by the time I'm done with it! My boys have really gotten into these bowls too, and enjoy building their own with their favorite toppings.

Recently I decided to do a riff on that burrito bowl by making it a bit lighter and going vegetarian style. I adore sweet potatoes, especially roasted, and thought they would be perfect to star in their own creation. That's when these Sweet Potato and Brown Rice Bowls were born! 

Sweet Potato & Crab Chowder

I love a big bowl of hot soup this time of year. Nothing warms me up on a cold day quite like it. Living in Michigan, we have a few cold days during the winter (HA!), so I make soups, stews and chilies quite often. Sometimes I use the slow cooker, other times I just make it on the stove. One thing is for sure though, these meals are typically easy to make, they feed a crowd, and they can be budget friendly!

This Sweet Potato & Crab Chowder is ready in less than 30 minutes, cost around $10 to make, and feeds a family of four! How awesome is that?! It can easily be made on a weeknight when you get home from work, and it's perfect to serve on a cold night. Add some rolls or biscuits to go alongside the chowder and voila! Dinner is served.

I eat soup pretty much all year round, but I absolutely love it in the fall and winter. There is nothing better than making a pot of homemade soup and the aromas it fills the house with. From French onion to creamy tomato to cheesy broccoli, I've cooked a lot of soups over the years, and I certainly have my favorites.

I've had butternut squash and apple soup before in a restaurant, but never made it at home. I decided to give it a try recently and make my own, but I gave my recipe a twist by using sweet potatoes instead of squash. I love sweet potatoes and thought they would be a perfect pairing with fresh apple and some nutmeg, and boy was I right! The soup is absolutely delicious and was quickly devoured by my entire family.

Technically it's still Fall, but Old Man Winter is breaking down the door here in Michigan. Cold, snow, wind...YUCK. I am not ready for this! But I still have Fall food on the brain, I'm just not ready to give that up yet.

I know I've mentioned this before but I'm a huge fan of pumpkin and sweet potatoes and I love cooking with them. I can't wait to have delicious sweet potato casserole on Thanksgiving! Recently I decided to create a dessert recipe with sweet potatoes instead of the usual savory recipe, and what I came up with is a masterpiece. At least it is in my eyes. I made a light and fluffy Sweet Potato Bundt Cake with a mouthwatering Dark Chocolate Ganache. It's simply delightful and very easy to make.

A couple of weekends ago my bestie and I went on a little girls weekend. We didn't go far, just about an hour or so away, but it was wonderful to get away. We shopped, ate too much, walked the beach, took pictures, and just talked. A lot. We are so busy with our families and everyday lives that we don't often get time to hang out for hours and just catch up on life!

So part of our trip was spent walking around the wonderful farmers markets in Grand Rapids. I literally could live in the new Downtown Market. If I lived closer, I'd be there every. Single. Day. I'd go there and buy ingredients for that nights dinner. They have produce, meat, fish, coffee, ice cream, cheese, spices...and the list goes on.
