Everyone loves the classic Chicken Parmesan. My version is a bit different as it's not breaded and fried, but it IS smothered in marinara and covered in cheese! And the best part? It can be on your dinner table in 30 minutes!

Everyone should know by now that I am the queen of quick weeknight meals. With everything that we all have going on, I need to get something on the table fast, but I also want it to be delicious and good for us. Lately my slow cooker has been my best friend, but I also really love skillet meals. One dish, less mess, everything cooks in one pan. Skillet meals are also great this time of year because I hate turning on my oven when it's hot out!

So I recently discovered the new Tyson® Individually Frozen Thin Sliced Boneless Skinless Chicken Breasts at Walmart. There are so many things that I like about them, but for starters I love the fact that you can take out whatever you need and just toss the rest back in the freezer. Plus, they don't need to be thawed! You can throw them on the grill or in your skillet in their frozen state and they cook up beautifully. They also boast 21 grams of protein and are all natural.

This Skillet Chicken Parmesan is my new favorite meal. It's so quick and easy to prepare and only calls for six ingredients. SIX! Plus my kids love it too, which we all know is very important. I don't bread and fry my chicken, just cook it in the skillet. The dish is very flavorful and in my opinion doesn't need the extra calories that come along with breading.

It does take one pot and one pan, but it's still minimal mess to clean up. And there's no turning on the oven. That's a bonus!

Skillet Chicken Parmesan

Serves 4

Ingredients:
1 pound thin spaghetti
24 ounce jar marinara sauce
1/4 cup Parmesan cheese
4 slices mozzarella cheese
2 Tablespoons finely chopped fresh parsley

Cook the spaghetti according to package instructions. Keep warm.

Warm a large skillet over medium-high heat and add the four chicken breasts. Brown the chicken, about 5 minutes per side. Add in the entire jar of marinara sauce and turn the chicken breasts to coat them completely. Bring to a boil, then reduce the heat to a simmer and cover the skillet. Cook for 15 minutes, until the chicken is cooked through and tender.

Sprinkle each chicken breast with the Parmesan cheese, then top each one with a slice of mozzarella. Cover the skillet to melt the cheese.

Add a helping of spaghetti to each of four plates. Ladle some sauce on each one, then place a chicken breast atop the spaghetti. Sprinkle with the parsley and serve.
