Caribbean Chicken Burgers with Red Gold Tomatoes

This isn't your ordinary burger! Tender, juicy and full of flavor, this burger will have you dreaming of the beach!

Recently I was sent a Red Gold Tomatoes Party Kit that included 6 cans of Red Gold diced tomatoes and the cutest little apron I've ever seen!

Red Gold products are perfect to use in so many different recipes, but I'm sure not everyone thinks to add them to their burger. And I'm not talking outside the burger, I mean inside! 

In my kit I also received a page of different recipes to use as inspiration. I decided to try my hand at the Caribbean Chicken Burgers, but I put my own spin on them! The burgers came out incredibly tender and juicy and full of flavor. I made a simple pineapple salsa to use as a topping and the results were amazing. The next time you are grilling out skip the traditional burger and try this delicious chicken version! 

Caribbean Chicken Burgers 
Recipe adapted from Red Gold Tomatoes
Makes 4 burgers


For the salsa:
1/2 cup fresh pineapple, diced
1/2 cup roasted red peppers, diced
1/4 cup red onion, diced

For the burgers:
1 lb. ground chicken
14.5 oz. can Red Gold® Petite Diced Tomatoes W/Lime Juice & Cilantro, drained completely 
1 egg, beaten
1/2 cup Italian bread crumbs
Salt and pepper, to taste
4 slices pepper jack cheese
4 bakery hamburger buns

First make the salsa. In a small bowl combine the pineapple, red peppers and red onion. Sprinkle with a pinch of salt and pepper and mix thoroughly. Set aside.

In a large bowl combine the ground chicken, drained Red Gold tomatoes, egg and bread crumbs. Form into four large burger patties and season both sides with salt and pepper.

Lightly brush the grill grates with vegetable oil to prevent the burgers from sticking. Grill the burgers over a medium flame until cooked through, keeping in mind the recommended temperature is 160 degrees. Lay a slice of cheese on each burger until melted, then remove the burgers to a plate.

Place each of the burgers on the bottom halves of four buns, then top with a couple spoonfuls of the pineapple salsa mixture. Put the top bun on and enjoy!
