Easy Flatbread Pizza

Easy Flatbread Pizza

The Pioneer Woman did it again. She shared another fantastic recipe on her blog that I just couldn't resist. Who doesn't love pizza? And even better, who doesn't love a super easy recipe? Well that's exactly what this recipe is. Easy. And delicious. Very delicious.

This pizza can be customized to your liking. So I'm not doing much here but giving you some ideas. Just like PW did to me. She gave me ideas. And then I made my ideas a reality for lunch today.

Your ingredients will include Naan bread (I use Stonefire brand), your choice of marinara sauce, cheeses, and all the veggies and meats you'd like to put atop your pizza.

I roasted my veggies. I used tomatoes and mushrooms today. I cut grape tomatoes in half and sliced up some fresh mushrooms too. I threw them on a pan, drizzled them with olive oil and sprinkled them with salt and pepper. I put them in a preheated 450 degree oven and let them roast for about 12 minutes.

Once my veggies were done I used the same pan and placed my Naan bread on it. I spread marinara sauce on, layered on some slices of mozzarella, then threw the veggies on top. Back in the oven for another 10 minutes or so until the cheese is melted and the bread is a little crisp. Viola! That's all there is to it. And you have yourself a personal pizza all to yourself.

Again, you can add any veggies or meats and different cheeses to this pizza. I'm already thinking about olives and zucchini for next time. After all, it's personal!
