We often have our usual quick and easy ground beef tacos during the week and I reserve making my favorite chicken for nachos or beef or pork for carnitas for the weekends since that's an all day adventure as I slow cook the meat in the oven for hours. **Spoiler alert** I've cut my cooking time down to an hour! You heard me right...ONE HOUR...from start to finish. That means I can have carnitas any day of the week, even on busy weeknights!

So back to these carnitas tacos. The beef is cooked up in a delightful spice-citrus sauce which makes the carnitas so juicy and flavorful. Of course you can use the carnitas for much more than just tacos. They are perfect for burrito bowls, quesadillas, even piled high on tortilla chips for nachos. The possibilities are endless!

Pressure Cooker Beef Carnitas Tacos

This Pressure Cooker Beef Carnitas Tacos recipe is juicy, flavorful and delicious and so quick and easy to make!

ingredients:

  • 1 cup low sodium beef broth
  • 4 garlic cloves, peeled and minced
  • Juice of 2 oranges
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 Tablespoon olive oil
  • 1 (2.5 - 3 pound) beef chuck roast, cut into large chunks (excess fat removed)
  • For serving: tortillas, fresh clinatro, chopped onion, guacamole and/or salsa

instructions:

  1. In a glass measuring cup or small bowl, whisk together the broth, garlic, orange and lime juice, seasonings, salt and pepper . Set aside.
  2. Push the "Saute" setting on the Souspreme Multi Pot. Add the oil and allow to heat up. Season the pieces of beef liberally with salt and pepper. Add the pieces to the pot and turn every minute or so until all the sides are browned. Press "Cancel" to turn off the heat.
  3. Pour the sauce mixture into the pot and toss to combine. Push the "Meat/Stew" setting on the Souspreme Multi Pot. Close the lid securely and set the vent to "Seal."
  4. Cook on high pressure for 45 minutes, followed by a natural pressure release.
  5. Remove the lid of the Souspreme Multi Pot and remove the beef to a cutting board. Shred the beef with two forks, then add it back to the pot with the juices.
  6. Pile the carnitas into warm tortillas and add your favorite toppings.
