Winter has officially arrived here in Michigan. After several weeks of unseasonably warm temps, we got our first snowfall this weekend. Along with that came wind and really cold temperatures. I already feel like I'm in hibernation mode! I'll be honest with you, I've lived in Michigan my entire life but I am not a fan of winter. Although the snow is beautiful to look at, I hate being cold and I can't stand icy roads. But I suck it up and deal with it though because there are so many other things to love about our beautiful state.

Speaking of being in hibernation mode, I stayed inside this weekend and baked a lot. This Mint Brownie Pie was at the top of my baking list and boy am I glad I made it. There are so many flavor combinations that go so well together, but chocolate and mint happens to be one of my absolute favorites. This pie couldn't be simpler to make either. A traditional pie crust gets filled with a rich mint brownie batter, then dusted with powdered sugar after baking. It's a crowdpleasing dessert that's perfect for any special occasion.

Mint Brownie Pie

Ingredients:
1 stick (1/2 cup) unsalted butter
3 ounces unsweetened chocolate, roughly chopped
1 pie crust, store-bought or homemade
3 eggs
1 cup granulated sugar
1/2 cup all-purpose flour
1 teaspoon pure vanilla extract
1 cup chocolate mint baking pieces (I use Andes Creme de Menthe Chocolate Mint Baking Chips)
Powdered sugar, for dusting

Preheat the oven to 350 degrees. 

In a medium bowl, microwave the butter and chocolate for 45 seconds. Stir and microwave in 15 second increments until the mixture is completely melted and smooth. Allow to cool slightly. 

Roll the pie crust out so that it's slightly larger than a 9-inch pie plate. Line the pie plate with the crust, trimming as necessary and crimping the edges. 

In a large bowl, whisk together the eggs and sugar until light and fluffy. Stir in the chocolate mixture, then add the flour and vanilla. Fold in the chocolate mint pieces. Pour the filling into the prepared pie crust. 

Bake the pie about 50 minutes, or until the filling is puffed up and the edges are slightly cracked. Cool the pie on a wire rack completely. Dust with powdered sugar, then slice and serve.
