In my quest for quicker, and healthier, breakfast options for my family, I came up with these super delicious mini ham and cheese frittatas. Made in a mini muffin tin, they seriously couldn't be any easier! Mix the ingredients up in one bowl, bake them in your tin, and voila! In less than 30 minutes you've got a batch of these bite sized beauties ready to go for the week. I love to make them on the weekend, that way when you're pressed for time those weekday mornings, you can pop a few in the microwave for a fast and portable breakfast.

These little frittatas aren't just for breakfast either. They are great cold, or at room temperature, and my kids love eating them for lunch, too. I pack four of them along with some fruit, and veggie sticks and dip for a nutritious lunch!

Mini Ham and Cheese Frittatas

Makes 8 servings (3 frittatas each)

Ingredients:
4 eggs
2 tablespoons heavy cream
2/3 cup diced ham
1/2 cup shredded Cheddar cheese
2 tablespoons chopped fresh parsley
1/4 teaspoon black pepper

Preheat the oven to 350 degrees. Spray a mini muffin pan with non-stick cooking spray and set aside.

In a medium mixing bowl with a spout, whisk together the eggs and heavy cream. Add in the remaining ingredients and mix to combine.

Carefully spoon the mixture into the prepared mini muffin tin. Bake for 20 minutes, or until the frittatas are set. Allow to cool in the pan for 5 minutes before removing them. Serve warm.

Leftovers can be stored in an airtight container in the refrigerator for up to one week. Serve at room temperature or warmed up in the microwave.
