School is back in session for my kids, which means it's back to packing lunches for mom! I really do enjoy making lunches for the boys. My oldest, who's taking classes at the community college this semester, loves for me to pack him a lunch a few times a week. He says it's so much healthier, and a lot cheaper! And my youngest, who plays sports about half of the year, loves eating healthy too. He tells me he just can't eat that cafeteria food every day! So just like my parents did for me, I try to create fun and delicious lunches for my guys.
My mom did most of the lunch making when I was growing up, but my dad would occasionally take over the duties. His favorite thing to make me was a peanut butter and cheese sandwich. I know what you are thinking...that sounds gross! But it was actually quite good. I haven't had one in years, but I think I may need to have one again soon!
I make a lot of sandwiches and wraps for my kids, and this roast beef and colby jack cheese sandwich is my newest creation. It's a simple sandwich, but it's a classic and truly delicious. This sandwich truly is a classic. Hellmann's Real Mayonnaise, crispy iceberg lettuce, colby jack cheese and flavorful and tender roast beef come together between two slices of whole wheat bread in perfect unity.
Add a piece of fruit, some crackers and a dessert to your brown bag, along with your sandwich, and you've got yourself the perfect lunch! As you can see, I also like to leave special notes on my lunch bags, too. I'm sure my boys appreciate that, haha!
Classic Roast Beef & Cheese Sandwich

Makes 1 sandwich
Ingredients:
2 slices whole wheat bread
Hellmann's Real Mayonnaise
Iceberg lettuce leaves
1 slice Colby Jack cheese
3 - 4 thick slices roast beef
Lay the two slices of bread onto a work surface and squeeze the Hellmann's mayonnaise onto both. {Don't forget to write a message!} On one slice of bread, layer the lettuce, cheese and roast beef, then top with the other slice of bread, mayonnaise side down. Cut in half and serve.
