Happy Holidays, friends! I hope you had an amazing Thanksgiving, despite the crazy circumstances we are in right now. In some ways this year has flown by, and on the flip side, in the midst of this pandemic, it seems like it's been the longest year ever. I don't know about you, but I'm ready for some normalcy in my life! I decorated for Christmas early this year - like really early - but it was good for both my mind and soul. Twinkling lights, Christmas music and everything warm and cozy lifts my spirit and brings me joy, and that's all that really matters, right?

I am still hosting Christmas this year for my kids and my parents, which I am thrilled about. I love to host, and small, intimate gatherings are my jam. I've been dreaming up new dishes and desserts to add to my menu, along with our tried and true favorites, and today I am sharing the easiest and best dessert ever! This Mint Chocolate Chip Ice Cream Tart is really quite simple to put together and has the perfect flavors for the holidays. Not to mention it's topped with homemade chocolate whipped cream...yummm! And let's be honest, ice cream is always in season and perfect any time of the year!

This tart starts with a mint chocolate cookie crust base, then a thick layer of Hudsonville's Mint Chocolate Chip ice cream. I also add some chopped mint chocolate candies to the ice cream to give it an extra minty boost! Right before serving, whip up some homemade chocolate whipped cream and sprinkle more chopped mint chocolate candies on top for the finishing touch! Ice cream can make the most wonderful time of year sweeter and more special when you're sharing a scoop with someone you love, and I can hardly wait to share this dessert with my family on Christmas Day.

Mint Chocolate Chip Ice Cream Tart

You only need four ingredients to make this insanely delicious ice cream tart! With a mint chocolate cookie base, a thick layer of mint chocolate chip ice cream, and chopped mint chocolate candies, this is one holiday dessert you don't want to miss!

Ingredients

  • 30 Mint Oreo Cookies
  • 5 Tablespoons unsalted butter, melted
  • 48 oz. carton Hudsonville Mint Chocolate Chip ice cream
  • 1 cup Andes Crème De Menthe baking chips or chopped mints, divided
  • 2 cups heavy whipping cream
  • 1/4 cup cocoa powder
  • 1/4 cup sugar

Instructions

  1. Add the cookies to the bowl of a food processor and pulse until coarsely ground. With the food processor on low, slowly add the melted butter and process until mixture resembles wet sand. Firmly press the mixture into the bottom and up the sides of a springform pan. Freeze until firm, about 30 minutes.
  2. Add the carton of ice cream to a large bowl and let sit on the counter until slightly softened. Once softened, fold in 2/3 cup of the mint chips to the ice cream. Spoon the ice cream into the crust and smooth the top. Freeze until hard, at least 8 hours.
  3. Just before serving, place the cold whipping cream in the bowl of a stand mixer fitted with the whisk attachment. Whisk the cream on high speed until thick enough that it doesn't collapse when you lift up the whisk. Add the cocoa powder and sugar and whisk until combined.
  4. Top the tart with the whipped cream and sprinkle with remaining chopped mint candies. Run a large knife under hot water and wipe dry, then cut the tart into slices. Repeat between cutting each slice.
