Do you have a summer vacation planned? Or do you have a special trip that you take every year? Every single summer of my childhood my parents and I visited my grandparents in Louisiana. My mom grew up there, met my dad working at the Fort Polk military base hospital, they got married, and eventually settled down in Michigan where my dad is from. With the exception of one or two flights, we always drove to Louisiana. It was about 1,200 miles from our house in Michigan, a 17 hour drive. We never made the drive in one day, we'd always stop for the night to have dinner and rest, and then get up the next day to make the rest of the trip. I should mention that I'm an only child, so these trips I spent in the backseat of our car listening to music, reading, daydreaming, or playing car games with my parents. These are lifelong memories that I'll never forget.

My grandparents lived in a teeny tiny town called Hornbeck which is in central Louisiana, close to the Texas border. Hornbeck had a church and schools, but other than that there was one stop light, a gas station, a post office, and a local coffee shop. That was it! I spent time fishing with my grandpa, riding the horses, helping to feed the goats and other farm animals, and visiting the PX on the army base with my grandma. Oh how I miss those times!

During our road trips we always had plenty of snacks and drinks in the car. One of my favorite treats that's simple to make and perfect for a road trip are these Mint Chocolate Potato Chip Clusters. Made with a couple of my favorite Midwest favorites - Junior Mints and Great Lakes Kettle Cooked Potato Chips - they are salty, sweet and crunchy. The perfect combination!

These delicious bites are well loved by my kids and something that I often pack when we go on our own road trips. I also pack a cooler with our favorite drinks like Original New York Seltzers and a variety of World Market sodas. Another thing that's essential on our road trips are car games. I played Mad Libs as a kid and I love that they've continued to make them over the years. Checkers and hangman have always been games that my kids loved to play together and these magnetic versions are perfect for car rides. Be sure to have pens, pencils and paper on hand for writing and doodling too.

Mint Chocolate Potato Chip Clusters

Makes 24

Ingredients:

2 - 4 ounce boxes Junior Mints
1 1/2 cups coarsely crushed Great Lakes Potato Chip Co. Original Potato Chips
1/2 cup chopped pecans

In a large glass bowl, microwave the Junior Mints in 30 second increments until melted and smooth. Stir in the chips and pecans until combined. Drop by spoonfuls into mini cupcake liners and refrigerate until set.
