Friends, I've been craving muffins like crazy lately. I don't know why, but I've just really been in the mood for muffins morning, noon, and night. They are the perfect on-the-go breakfast or quick snack, and they even work as a healthy alternative to dessert. Sprouted Wheat Blueberry Yogurt Muffins

Makes 2 dozen muffins

Ingredients:
2 cups King Arthur Sprouted Wheat Flour
2/3 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups Stonyfield 100% Grassfed Plain Yogurt
1/3 cup canola oil
2 teaspoons pure vanilla extract
1 cup fresh blueberries
Vanilla sugar, for topping

Preheat the oven to 375 degrees. Spray two 12-cup muffin tins with non-stick baking spray and set aside. 

In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a small bowl, whisk together the yogurt, oil, and vanilla. Pour the wet ingredients into the dry ingredients and stir just until combined. Gently fold in the blueberries.

Spoon the batter into the prepared muffin tins, filling them about 3/4 full. Sprinkle the tops of the muffins with vanilla sugar, if desired.

Bake the muffins for 20-22 minutes, or until a cake tester inserted into the middle of a muffin comes out clean. Allow the muffins to cool for 10 minutes in the pan, then set them on a rack to finish cooling.

Serve the muffins warm or at room temperature.
