Everyone knows I love pasta, and you should know by now that also I love quick and easy meals. With how busy we are {and I know you are too} it's a relief to have a dinner recipe that is simple, healthy and delicious to feed my family any weeknight. This dish is really easy to make, light and fresh, but also hearty. It makes a perfect weeknight meal and is great on its own or served with a side salad and a few slices of rustic bread. Pesto-Herbed Angel Hair and Peas

Serves 6
Print this recipe

Prep time: 15 minutes
Cook time: 5 minutes
Total time: 20 minutes

Ingredients:
1 box Dreamfields Angel Hair

1 jar (8 ounces) basil pesto
2 cups frozen sweet green peas, thawed, divided
1 tablespoon fresh parsley
1 clove garlic
2 cups tightly packed spinach, torn
Crushed red pepper flakes
Chopped parsley

Prepare pasta according to package directions. Reserve 1 cup cooking liquid before draining Place pasta in large serving bowl.

Meanwhile, place pesto, 1 cup of the peas, the parsley and garlic in bowl of food processor; process until smooth.

Toss pesto mixture with pasta. Add cooking liquid, a ladle at a time, until mixture is a creamy consistency. Add spinach and remaining 1 cup of peas. Toss to combine. Sprinkle with crushed red pepper flakes and additional chopped parsley, if desired.
