This Southern Fried Chicken recipe is my mama's favorite. It's crispy on the outside, extra tender and
juicy on the inside, and full of flavor. It's the perfect dish for any potluck or picnic!
Having family in the South, I've eaten a lot of southern food over the years. My grandma made the best fried catfish and hush puppies, and she canned like a queen. Her bread and butter pickles were to die for! I learned so much about cooking from her, and of course from my mom, too.
My mom's favorite food is definitely chicken. Growing up, I'm pretty sure we had some sort of chicken dish for dinner at least 4-5 times a week. My dad and I would tease her because we'd ask what's for dinner, but we already knew the answer! Don't get me wrong, mom is a fantastic cook. This fried chicken recipe is proof of that!
This southern fried chicken is soaked in buttermilk which keeps it tender and juicy on the outside. The skin gets super crispy when cooked, and it's just packed with flavor. It's perfect with mashed potatoes and biscuits for Sunday supper, or paired with potato salad for a picnic or potluck. Whatever you do, just be sure to make this chicken! Mama's Favorite Southern Fried Chicken
Author: Sarah Bates | The Chef Next Door
Serves 4
Ingredients:
8 - 10 bone-in chicken pieces (a combination of drumsticks, thighs and wings)
2 cups buttermilk
1 teaspoon salt
Dash or two of hot sauce
Canola or peanut oil, for frying
1 cup flour
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
In a large bowl, toss the chicken, buttermilk, salt and hot sauce, making sure each chicken piece is coated. Cover and refrigerate for one hour.
Heat an inch or so of the oil in a large cast iron skillet or other deep skillet over medium-high heat until a deep-fry thermometer reads 350 degrees.
Mix the flour, paprika, garlic powder and pepper in a pie plate or shallow dish. Remove three or four of the chicken pieces at a time from the buttermilk, shake off the excess, and roll in the flour mixture. Shake off the excess flour and carefully place in the hot oil. Fry, turning occasionally, until golden brown and cooked through, about 15 minutes. Drain on paper towels.
Bring the oil back up to 350 degrees and repeat with the remaining chicken pieces, frying again for 15 minutes. Serve the chicken hot or at room temperature.
