This hearty and delicious Mexican sandwich and simple salsa come together quickly
when you are pressed to get dinner on the table!
As we transition from Winter to Spring the first thoughts that come to mind {other than warmer weather!} is food. It's almost time to finish off the comfort foods and move forward with fresh veggies and fruits, lighter meals, and breaking out the grill! Although the type of food we eat may change, the fact that I need quick meals for my family doesn't change one bit. We are still busy. There are still sports, school work and other activities going on. That seems to be a constant throughout the year!
Even though I want fast meals, I still want them to be delicious and nutritious. That's why I love pairing my favorite canned foods with fresh produce and baked goods to create a simple and satisfying meal for my family.
One of my favorite canned items that you'll always find in my pantry is Rosarita Refried Beans. My boys love bean and cheese quesadillas, homemade nachos loaded with refried beans and shredded chicken, and taco salads with a layer of beans on the bottom. They are very versatile and again, a staple in our house!
I recently made the family these delicious Mexican Torta Sandwiches. They are super easy to make and take no time at all to put together. Have you had a torta before? Or even heard of it? A torta is a type of Mexican sandwich, most often served on a Bolillio roll. Tortas can be eaten hot or cold, and sometimes grilled or toasted in a panini press. They often include ham or pork, but some of the simpler sandwiches are made with beans, just like mine.
Common garnishes for the torta are avocado, chili peppers, tomato, and onion. Instead of placing these ingredients on my torta separately, I decided to whip up my favorite salsa.
This 5 minute salsa is made in the food processor and is my favorite Kitchen Hack! You just toss the ingredients into the processor and blend them up. It's quick, delicious, and is the perfect topping for this simple bean torta. The salsa is also great for lots of other Mexican dishes, and of course with tortilla chips!

Mexican Torta Sandwiches

4 Bolillio rolls
1 can Rosarita Traditional Refried Beans
1 cup crumbled Queso Fresco cheese
5 minute salsa (recipe below)
Preheat the broiler to high. Slice open the rolls and spread about a quarter cup of the refried beans on the bottom halves. Sprinkle with about a few tablespoons of the cheese. Place the sandwiches on a baking sheet and broil for about 5 minutes, until the rolls are toasted and the cheese is melted. Remove from the oven and spoon salsa over the melted cheese. Close the buns and serve.

5 Minute Salsa

Ingredients:
1 garlic clove, peeled
1 jalapeno, seeded and cut into 4 pieces
1/2 of a small red onion, peeled and quartered
1 teaspoon salt
1 pint grape tomatoes
Small handful fresh cilantro, stems discarded
Juice of half a lime
Add the garlic, jalapeno and onion to the bowl of a food processor and process on low until finely chopped.
Add the remaining ingredients and pulse until the salsa has reached your desired consistency. Taste and adjust seasonings accordingly.

I found everything I needed for both of these recipes at my local Walmart! Rosarita Beans are located in the International Foods aisle. They have a beautiful selection of tomatoes and onions in the Fresh Produce section. Walmart also carries many different kinds of homemade bread and rolls, and I was able to find the Bolillio Rolls in The Bakery.
