Delicious and nutritious, these bite sized treats are the perfect snack for the whole family!
I've made different kinds of homemade granola before, as well as my own granola bars. These little energy bites have similar components to a granola bar, just in a different shape. I saw a similar recipe for these bites on the Door to Door Organics website and then created my own version. I love to keep a batch in the frig and when the kids are hungry or need a healthy treat before a sporting event, they can reach in and grab a few and go.
The best part about these bites is that they're customizable! I use Peanut Butter & Co's amazing Dark Chocolate Dreams Peanut Butter for this recipe, but you can play around and use other peanut butter flavors as well. (I happen to adore Peanut Butter & Co and they have other flavors like Maple, White Chocolate and Honey that would be fabulous in this recipe!) Add in different types of chocolate chips, change up the nuts, the possibilities are endless!
No Bake Dark Chocolate Dreams Energy Bites

Ingredients:
1 cup rolled oats
1/2 cup sweetened coconut flakes
1/2 cup ground flaxseed
1/2 cup all natural semi-sweet chocolate chips
1/3 cup roughly chopped pecans
1/2 cup Peanut Butter & Co. Dark Chocolate Dreams Peanut Butter
1/3 cup wildflower honey
In a medium bowl, stir together the oats, coconut flakes, flaxseed, chocolate chips and pecans until combined. Add the peanut butter and honey and mix until thoroughly combined. Cover and let the mixture chill in the refrigerator for 30 minutes.
Once chilled, use a small scoop to scoop the mixture out and roll into one inch balls. Store the bites in an airtight container and keep refrigerated for up to one week.
