Chopped Taco Salad

Taco salad is a favorite meal in our house. I've been making it the same way for quite awhile now and we keep it in our dinner rotation at least once a month.

I got the idea a couple of weeks ago to kick my taco salad up a notch. Add some ingredients to give it a healthy boost, mix in a zesty dressing, and chop things up so they're all bite size. I've always loved eating chopped salads at restaurants, just never tried making them at home!

I have to say, this salad is amazing. My boys loved it so much that they requested to replace my old version with this new one from now on. They said they like it that much more!



Chopped Taco Salad

Ingredients:
1 lb ground turkey 
1 packet taco seasoning
2/3 cup water
Head of lettuce, chopped into bite sized pieces
2 cups Mexican blend cheese
1 cup frozen corn, defrosted and drained
1 cup pinto beans, drained and rinsed
1 cup crunchy tortilla strips 
1/2 cup fresh diced tomatoes
1/2 cup Ranch dressing
1/2 cup salsa

In a large skillet brown the ground turkey until completely cooked. Drain, if needed. Add in the packet of taco seasoning and 2/3 cup water. Cook over low heat until the sauce is thickened. Remove the taco meat from the heat and set aside.

Place the chopped lettuce in a large serving bowl. Add the cheese, corn, beans, tortilla strips, tomatoes and taco meat and toss gently to combine.

In a small bowl, mix together the ranch dressing and salsa. Pour over the salad and mix gently. 

Pile a generous helping of salad on a plate and top with a few more crunchy tortilla strips, if desired.
