Tortilla Pizza

My family is a big fan of pizza. Takeout pizza, homemade pizza, frozen pizza...we love them all. Of course we have our favorites, but we'll take it just about any way we can get it. But sometimes it's nice to do something different. Change things up a bit.

I was online last week looking for new dinner inspiration and came across a post about using tortillas as your pizza crust. What a genius idea! Why didn't I think of this before? I don't know why, but I knew I had to give this a try.

I was pleasantly surprised by the first pizza I made, so much so that I made two different kinds later in the week. This is the simplest and tastiest pizza to make, especially for one person. You can whip it up quickly any time of the day and it takes less than 10 minutes to bake.

I almost feel silly posting this a recipe, because it's crazy easy to throw together and the possibilities are endless. I'll show you the basics here, then you can make it all your own!!

Tortilla Pizza

Makes One Pizza

Basic Ingredients:
1 large burrito size tortilla
1 Tbsp olive oil
Garlic powder
1/2 cup Five Cheese Italian blend shredded cheese
1/4 cup Parmesan cheese
Optional ingredient ideas: tomatoes, basil, roasted broccoli, cooked Italian sausage, bell pepper, roasted kale, red pepper flakes

Preheat your oven to 425 degrees. Lay your tortilla on a baking sheet and cover it with the olive oil using a pastry brush. Sprinkle garlic powder all over the surface, using as much or as little as you'd like. Spread on the Italian blend cheese.

Now comes the fun part where you can add whatever toppings you like! Here are a few of my creations:
Sliced tomatoes and chopped fresh basil.

Thinly sliced yellow bell pepper, crispy kale and red pepper flakes. (For the kale, toss about 1/2 cup fresh kale with olive oil, salt and pepper and roast it on a sheet pan at 450 degrees for about 10 minutes, until cooked and crispy) 

 Italian sausage and roasted broccoli. (I used a sweet Italian sausage link  for this recipe. Remove the sausage from the casing and cook in a small skillet over medium heat until cooked completely. Drain on paper towels and set aside. For the broccoli, toss about 1/2 cup fresh broccoli florets with olive oil, salt and pepper and roast it on a sheet pan at 450 degrees for about 10 minutes, until cooked and slightly browned)

Once you have your toppings ready to go, spread them over the surface of your cheese covered tortilla. Sprinkle the Parmesan cheese over top of the goodies and pop it in the oven. Cook for 8-10 minutes, until the tortilla is nice and crispy and the cheese is melted.
