Cake Batter Funfetti Cookies

Looking for a quick and easy sweet treat for your family? Well look no further, these cake batter funfetti cookies are just what you need! 

My friend Star made these cookies last week and the minute I saw them I knew I had to try them for myself! She was kind enough to send me the recipe, which she found on Pinterest. 

They really do taste like mini vanilla cakes filled with crunchy little sprinkles. Delicious and so simple to make!

1 box vanilla cake mix, 18.25 oz (I used a french vanilla cake mix)
1 tsp baking powder
2 eggs
1/2 cup vegetable oil
1/2 tsp vanilla extract
1 cup sprinkles

Preheat the oven to 350 degrees. Spray a cookie sheet with cooking spray or line with parchment or a silpat.

In a large bowl, whisk together the cake mix and baking powder. In a small bowl, mix together the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine. Stir in the sprinkles. Drop by spoonfuls onto a cookie sheet.

Bake for 10 minutes. Allow to cool for 5 minutes on cookie sheet before transferring to cooling rack to cool completely. They will be very soft at first but will firm up as they cool.
