Happy March 1st! That feels really weird to say...because how can it be March already? I swear we were just celebrating the New Year! Well the good thing about it being March is that Spring is right around the corner. We've had a pretty mild winter here in Michigan, so I can't complain, but I'm definitely looking forward to warmer temperatures and seeing the sunshine a little more often. I don't like these dark, gray days!
With Spring close by that also means Easter isn't too far behind. I've already started thinking about the menu for our Easter brunch (I know, I'm an early planner!) because I want to do something different this year. I've always loved scones, so I decided to change things up and make a savory scone instead of a sweet one. I was shopping the other day and stumbled upon Odom’s Tennessee Pride® Country Sausage and thought it would be perfect in these Savory Sausage and Cheddar Scones!Scones are much easier to make than one might think. The process is simple - mix up your dry ingredients, cut in cold butter, add your mix-ins (in this case cooked sausage and cheddar cheese), then add buttermilk. That forms a dough, which is then divided and cut into scones. Easy, right?
These scones are perfect for Easter brunch, or really any Spring brunch for that matter. They pair well with scrambled eggs or an omelette, but are just as delicious on their own, too.

Savory Sausage and Cheddar Scones

Makes 16 scones
3 1/4 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
3/4 cup (1 1/2 sticks) unsalted butter, cold
1 1/2 cups shredded cheddar cheese
1 cup buttermilk
Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper and set aside.
In a large skillet, cook the sausage until brown, breaking the meat into small pieces with a wooden spoon. Drain the sausage well and set aside.
In a large bowl, whisk together the flour, sugar, and baking powder. Cut the cold butter into small pieces. With a pastry blender or two knives, cut in the butter until the mixture resembles coarse crumbs. Fold in the cheddar cheese and cooked sausage. Add the buttermilk all at once and stir until just moistened.
Turn the dough out onto a lightly floured surface and knead until it is nearly smooth. Divide the dough in half, then pat each half into a circle about 3/4-inch thick. Using a sharp knife, cut each circle into eight triangles. Place the scones on the prepared baking sheet, leaving a small space between each one. Bake for 18-20 minutes, until cooked through and lightly browned. Cool for 5 minutes, then serve warm.
