Have you jumped on the pumpkin spice train yet? I've been riding it for a long time, my friends. A long, long time! As soon as Fall hits, I'm standing in line at my favorite coffee shop to grab a pumpkin spice latte, or PSL as everyone likes to call them. In my opinion, they are the bomb! So I'm sure you can imagine the sheer joy I felt when I received a lovely gift box from my friends at Peanut Butter and Co. and discovered that their new seasonal flavor is Pumpkin Spice. Say what?!? Pumpkin spice peanut butter? What could be better?

My mind was instantly reeling with ideas of what to make with this glorious peanut butter. Of course I made myself a piece of toast instantly so I could try it out, and it was just as good as I had imagined. But I wanted to make a sweet treat with it. And then it hit me. Peanut butter bars. Pumpkin spice peanut butter bars. So they'd be all nice and fall-like. With chocolate on top. And a pinch of sea salt. Ohmygoshtheyaresogood. It was hard not to eat half the pan in one sitting. Seriously people.

Another thing I love about this decadent treat is that there's no baking involved. Another score for me! Warm the ingredients on the stovetop, mix in your cereal, then spread in the pan. Pour the chocolate on top, sprinkle the salt on top, and allow to set up in the frig. That's all there is to it! Easy peasy. Perfect for tailgates, Fall parties, or just because you want to make the family a fun dessert. (I would keep them all to myself if I were you!)

Pumpkin Spice Peanut Butter Bars

Makes 24 bars
Print this recipe

1 cup sugar
1 cup light corn syrup
1 cup Peanut Butter & Co. Pumpkin Spice peanut butter
1/2 tsp pumpkin pie spice 
6 cups rice cereal
12 oz. bag semi-sweet chocolate chips
Flaked sea salt

Spray a 13x9 inch pan with non-stick cooking spray and set aside.

In a large saucepan, combine the sugar, corn syrup, peanut butter and pumpkin spice. Cook over medium heat until the sugar is dissolved, whisking frequently. Remove from the heat and add the cereal, stirring until completely coated. Spread the mixture into the prepared pan, pressing down gently with your fingertips.

Pour the chocolate chips into a medium bowl and microwave for one minute. Remove and stir. Continue microwaving in 20 second increments until the chocolate is completely melted and smooth. Spread it evenly over the bars. Sprinkle a little bit of sea salt all over the top of the chocolate. Set the pan in the refrigerator until the bars are set, about an hour.

Remove the pan from the refrigerator and cut into 24 bars. Store leftovers in a covered container in the refrigerator.
