Happy first day of Fall! To celebrate the first official day, I'm sharing with you one of our favorite warm, comforting meals.
This is the best mac and cheese recipe ever. Well, at least in my opinion. And my kids think so too. It's really cheesy and gooey and has bits of bacon throughout. It comes together pretty quickly, only baking in the oven for about 15 minutes, so it's a perfect weeknight meal. Bake some rolls or garlic bread and whip up a salad and dinner is served!
Baked Bacon Mac & Cheese

2 cups uncooked elbow macaroni
12 oz. low fat evaporated milk
1/2 tsp salt
1/4 tsp white pepper
1/8 tsp paprika
2 cups shredded Colby Jack cheese
1 cup shredded Cheddar cheese
4 slices cooked bacon, chopped
Preheat the oven to 475 degrees. In a large pot of boiling water, cook the macaroni for about 8 minutes. (It will be under cooked but will finish cooking in the oven) Drain the pasta and set aside.
In a large bowl, whisk together the eggs and evaporated milk. Add the salt, pepper, paprika and cheeses and mix well. Fold in the chopped bacon, then add the macaroni noodles. Transfer to a 2-quart baking dish and gently spread the mixture to form an even layer.
Bake for 15 minutes, just until the sauce is bubbling. Let rest 10 minutes or so before serving.
