Skillet Chocolate Cake with Chocolate Icing

So last night I was in the mood to create a new recipe. AND I was in the mood for chocolate. That's a dangerous combination.

So I made a skillet chocolate cake. Yep, you heard me right. A chocolate cake in a skillet. In my new cast iron skillet to be exact. This cake was good. I mean REALLY good. Not the kind of cake I should have been eating at 9:00 at night, but whatever. I worked out yesterday morning so that cancelled out my cake eating escapade, right? 

I mean, please tell me I'm right.

Skillet Chocolate Cake with Chocolate Icing


Ingredients for the cake:
1 cup flour
I cup sugar
1/2 tsp baking soda
Pinch of salt
1/4 cup butter
1/4 cup vegetable oil
3 Tbsp cocoa powder
1/2 cup water
1/4 cup milk 
1 egg
1 tsp vanilla

Ingredients for icing:

1/4 cup butter
2 Tbsp cocoa powder
4 Tbsp milk 
2 cups powdered sugar
1 tsp vanilla

Preheat your oven to 350 degrees. In a large bowl whisk together the flour, sugar, baking soda and pinch of salt; set aside. 

In a 10-inch cast iron skillet bring the butter, oil, cocoa powder and water to a gentle boil. Remove it from the heat and whisk in your dry ingredients. Next, add in the milk, egg, and vanilla and mix well. Put the skillet in the oven on the middle rake and bake for about 20 minutes or so, or until a toothpick comes out clean. 




When you take the cake out of the oven, make the icing. In a saucepan bring the butter, cocoa powder and milk to a boil. Remove the mixture from the heat and add in the powdered sugar and vanilla. Mix it well to combine. Pour the warm sauce over the warm cake and spread it with an offset spatula. 




You can serve the cake with vanilla ice cream, like I did, or even whipped cream or warm caramel. Or, you can eat just like it is. It's delicious any way you slice it!
