Happy New Year! I know I'm a few days late, but better late than never right? I'm excited to share a new recipe with you today but really I am just thrilled to be back blogging again. As I'm sure you've noticed, I haven't been around much the last year or so. I had a lot going on with my job and my family and I felt it was best to take a break for a bit. I've missed being here so much, it feels amazing to be back!
I sat down a few weeks ago and really thought about my goals and intentions for 2020. As far as the blog goes, my hope is to start sharing recipes weekly again, and eventually get back to posting two to three times a week. For now though, baby steps. I don't want to pressure myself too much! That's when everything goes downhill and I get discouraged. So for now, I'm taking things slowly.
The recipes I want to share most with you this year are simple and easy, nutritious and delicious. Quick dinners that the whole family will love as well as fun sweet treats. You know me, I can't forget my sweet tooth!

To start of the new year I'm sharing one of my absolute favorite family dinner recipes - skillet pizza pasta. I mean, who doesn't love pizza?! This dish combines two of our most requested meals - pizza and pasta - and puts them together. The best part is, you only dirty one skillet! Oh and it's ready in 30 minutes. A double win!
This skillet pizza pasta is full of Italian sausage and pepperoni, but you can add any of your favorite pizza toppings to the dish. Mushrooms, chopped green peppers and olives would all be tasty additions. Customize it any way you like!
30 Minute Skillet Pizza Pasta
Yield: 4
prep time: cook time: 30 Mtotal time: 30 M
ingredients:
- 1/2 pound ground Italian sausage
- 1/2 cup diced pepperoni
- 28-ounce jar marinara sauce
- 1 cup water
- 2 cups uncooked cellentani (or rotini) pasta
- 1 cup shredded mozzarella cheese
- Chopped parsley, for garnish
instructions:
- Cook the sausage in a large, deep skillet over medium-high heat until thoroughly cooked. Drain off any fat. Add the pepperoni and cook for an additional minute.
- Add the marinara, water and pasta to the skillet and bring to a boil. Reduce the heat to medium-low, cover, and cook until the pasta is tender, about 15 minutes. Stir occasionally.
- Remove the skillet from the heat and sprinkle evenly with the cheese. Cover and let stand for a few minutes to melt the cheese. Sprinkle with the chopped parsley and serve immediately.

DeleteAs soon as I got this post I just couldn't control myself from making this mouth-watering pasta. When you have a long list of pending writing tasks and have to Write My Assignment while working late at night then this can be the best snack I must say.
