Weeknight dinner just got easier with this flavor packed One Pot Pasta with Fresh Tomatoes and Spinach!
This past weekend my youngest son graduated from high school. {If you follow me on Instagram then I'm sure you saw a few photos!} He is my baby. My baby is no longer in high school. It sounds so weird to say that! The past four years have flown by and I'm so proud of him, but I'm still coming to terms with the fact that my babies aren't babies anymore. It's really hard being a parent sometimes! Please tell me you agree and that I'm not alone?!Our weekend was pretty hectic between graduation and trying to get our house ready for the upcoming graduation party, and sadly I didn't get my weekly grocery shopping done. I'm sure some of you can relate! Instead of immediately freaking out about what I'd make for dinner tonight, I opened up the pantry and frig and realized that I already have what I need to make one of my favorite weeknight meals - this One Pot Pasta with Fresh Tomatoes and Spinach! I love one pot meals for their simplicity and minimal dish usage, because clean up is definitely my least favorite part of cooking.
This dish is nutritious, delicious, and packed with flavor. It's ready in just about 20 minutes, which literally makes me feel like Superwoman when I put it on the table. I mean, dinner in less than 30 minutes? There's no excuse to stop at the drive through or get greasy takeout when you can have this instead!
One Pot Pasta with Fresh Tomatoes and Spinach

Serves 4
Ingredients:
1 Tablespoon olive oil
2 garlic cloves, grated
1 1/2 cups low sodium chicken broth
8 ounces dried spaghetti (I use Delallo)
1/2 pint grape tomatoes, halved
4 fresh basil leaves, finely chopped
1 Tablespoon finely chopped fresh oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
6 ounces fresh baby spinach
1/4 cup freshly grated Parmesan cheese
Heat the oil a large saucepan over medium-high heat. Add the garlic and saute for 2-3 minutes, stirring often so the garlic doesn't burn.
Add the broth, spaghetti, and tomatoes and bring to a boil. Be sure the pasta is submerged in the liquid. Add the basil and oregano. Cover the pan, reduce the heat to medium-low, and cook for 8 minutes, or until the pasta is almost done.
Stir in the salt and pepper, then add the spinach in batches, stirring until the spinach is wilted. Remove from the heat and sprinkle with the Parmesan cheese.
