Hello friends! It's day two of #BrunchWeek and I'm so excited to share with you this Cinnamon Apple Oatmeal Bake! Oatmeal bakes are my new best friend. They are so easy to make and also very customizable. You can swap out the fruits and spices with some of your favorites if you like. The combination of cinnamon and apples reminds me of my childhood, when I used to eat the little packets of instant oats for breakfast. My kids loved those too when they were little. {Actually, Evan still does!} This dish is perfect for breakfast or brunch as it feeds a crowd. Don't worry though, if you decide to make it for just your family and have leftovers, it's equally delicious warmed up!
I used Rainier Fruit Lady Alice apples in my oatmeal bake. Have you heard of them? Lady Alice apples are known as a “Washington original” and were discovered randomly growing in a local orchard. This variety is known as a “chance seedling” where it was the result of mother nature cross pollinating between two different types of apples trees to create it, which is why to this day, Rainier Fruit still does not know what the two parent varieties are to this apple.They are a wonderful all-purpose apple that is most popular for snacking, yet they are great for salads, on a fruit platter, or in baked goods.

I also want to mention that I used Dixie Crystals Sugar and Nielsen-Massey Vanilla and Almond extracts in this dish. Cinnamon Apple Oatmeal Bake

Serves 8

Ingredients:
2 cups quick cooking oats 
1 teaspoon cinnamon
3 cups milk
2 eggs
Rainier Fruit Lady Alice Apple, peeled, cored, and diced 

Preheat the oven to 350 degrees. Spray an 8-inch square baking dish with non-stick cooking spray and set aside. 

In a large bowl, combine the oats, sugar, and cinnamon. In a medium bowl, whisk together the milk, eggs, and extracts. Add the wet ingredients to the oat mixture and mix well. Fold in the apples, then pour into the prepared baking dish. 

Bake for 40 to 45 minutes, or until the oatmeal is set and the center jiggles just slightly. Remove from the oven and allow to rest for just a couple of minutes. Spoon onto plates or in bowls to serve.
