My kids absolutely love buffalo chicken wings. Me, not so much. I like the flavor, just not the mess that comes along with eating them. It never fails that I have sauce all over my face, my hands and sometimes, my clothes. I'm a hot mess! I recently started making an amazing Buffalo Chicken Dip that has all the flavors of those beloved chicken wings, it's just a bit cleaner and easier to eat at a tailgate or party.

One of the things I love most about this dip is how easy it is to make. You need 30 minutes and just 5 simple ingredients, that's it. Can you believe it?! I shred a rotisserie chicken from the store which saves a ton of time since it's already cooked up for me. I use shredded chicken in so many things - wraps, salads, this dip, the list goes on - it really is an awesome time saver! I also use ranch dressing in this dip, versus blue cheese, because my family and I just aren't big fans of blue cheese in general. If you like it, you can most definitely use that instead of ranch!

This dip is perfect for tailgating, watching the game at home, or any other party in general. It's creamy and cheesy and a bit spicy, and is perfect served with bread slices, tortilla chips, or veggies.

Serves 12
Print this recipe

Ingredients:
1 cup shredded or diced cooked chicken
8 ounce package low fat cream cheese, softened
1/2 cup ranch dressing
1/2 cup buffalo sauce 
1 1/4 cups shredded cheddar cheese
Salt and pepper, to taste

Preheat the oven to 350 degrees. In a large bowl mix together the chicken, cream cheese, ranch dressing, buffalo sauce, and 1 cup of the cheddar cheese. Season with salt and pepper.

Pour the dip into a baking dish and top with the remaining 1/4 cup of cheese. Bake for 20 minutes or until hot and bubbly.

Remove the dip from the oven and serve warm with baguette slices, chips, or vegetables.
