Are you getting into your back to school routines again? Tomorrow starts the third week of school for my youngest so we are almost settled into our old routine and it feels so good. I like to have order in my life, to have things planned out. My trusty planner is my best friend and I live by it. I know, it's a good and a bad thing to rely on it so much and to live by a schedule, but I just feel much less stressed if I know what's coming at me. 

Dinner can definitely stress me out from time to time if I don't have a plan in place. Do you menu plan for the week? Or just fly by the seat of your pants? I feel like I'm somewhere in between most days. There's stuff in the house to be cooked, but I may just not have planned out exactly what we are having on what day. This school year year I'm hoping to change that.

I definitely want to plan my weekday meals in advance, and I'm going to start menu planning on the weekends. I'm going to utilize my slow cooker more {which I dearly love}, and make some meals ahead of time. Take for instance this Sausage and Spaghetti Bake. It's a great dish for the family on a weeknight but it does take a bit of time to put it all together. That's why I build it on a Sunday, then bake it during the week. Pair it with a side salad and garlic bread, and dinner will be served in no time. AND there's no stressing about what to make for dinner! It's a win for mom and a win for the family.

Ingredients:
1 lb. spaghetti
1 lb. ground Italian sausage
1/2 cup chopped onion
24 ounce jar marinara sauce 
2 eggs
1/2 cup grated Parmesan cheese
16 ounce container part skim Ricotta cheese
3 cups shredded mozzarella cheese, divided

Preheat the oven to 350 degrees. {If you are doing this as a make ahead meal, no need to turn on the oven} Spray a large rectangular baking dish with non-stick cooking spray and set aside.

Cook the spaghetti according to the package directions for al dente. Drain and set aside.

In a large skillet, cook the sausage and onion over medium heat until the sausage is cooked through. Drain off any grease. Stir in the marinara and set aside. 

In a large bowl, whisk together the eggs and Parmesan cheese. Add the cooked spaghetti to the egg mixture and toss to coat completely.

Place half of the spaghetti in the bottom of the prepared pan. Top with half of the Ricotta cheese, half of the sausage mixture, and half of the mozzarella cheese. Repeat all the layers. 

Cover and bake for 40 minutes. Uncover and bake an additional 15 minutes, or until the cheese is melted.

*If you are preparing this as a make ahead dish, layer the casserole as directed above, allow to cool completely, then cover tightly with foil. Place in the refrigerator for up to two days. When ready to cook, allow the dish to come to room temperature while the oven preheats. Bake as directed above.
