I love seafood, but I don't cook with it nearly enough. {Other than a box of fish fillets...I know, don't judge!!} Cooking with fresh seafood is something I really want to get better at this year. Scallops, shrimp, fish, I enjoy it all! Lucky for me, my kids like it too. 

I decided I wanted to make a really nice {OK, fancy!} dinner for my boys on Valentine's Day. After all, they are my favorite Valentines ever! I wanted this dish to be simple to make, and something that we could have often, not just on special occasions. This Shrimp Scampi with Linguine was the winner, and I couldn't be happier with how it turned out!

When I say this dish is easy to make, I mean it's really easy. A handful of delicious, fresh ingredients is all you need. Shrimp Scampi with Linguine

Serves 3-4
Print this recipe

1/2 pound linguine
3 Tablespoons unsalted butter
2 Tablespoons olive oil
3 cloves organic garlic, minced 
1 pound jumbo shrimp, peeled and deveined
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh organic Italian parsley, chopped 
1 teaspoon fresh lemon zest
Juice of 2 organic lemons
1/4 teaspoon red pepper flakes

Bring a large pot of water to a boil and cook the linguine according to package directions. 

In a 12-inch cast iron skillet, or other large skillet, melt the butter and olive oil over medium heat. Add the garlic and saute for 1 minute, stirring often. Add the shrimp, salt and pepper and cook until the shrimp turn pink and their tails curl, about 6 minutes. Turn the heat to low and add the parsley, lemon zest, lemon juice, and red pepper flakes. Gently stir to combine. Drain the pasta and add it to the skillet, slowly tossing everything together. 

Sprinkle additional chopped parsley over the top before serving, if desired.
