We all know my love for Italian food runs deep. I mean REAL deep. I could eat it pretty much every single day and not get tired of it. There are so many different dishes to make, so many pastas to create with, there is no way I could get bored. Red sauces, white sauces, butter sauces, OH MY! I could go on and on, but I'll spare you my crazy food babble. I sometimes get carried away!

This Lemon Penne Pasta with Mushrooms and Spinach is super simple, super light, and quick to make. It's a fabulous weeknight meal, perfect on its own or served with a side salad and bread. Now, are you ready to make some pasta? I know I am!

Lemon Penne Pasta with Mushrooms and Spinach

Makes 6 servings
Prep Time: 15 minutes | Cook Time: 15 minutes

Ingredients:
1 box Dreamfields Penne Rigate
2 tablespoons olive oil
2 cups thinly sliced fresh mini Portobello mushrooms
2 cloves garlic, grated
1 package (5 ounces) fresh baby spinach
1 tablespoon chopped fresh basil
1/4 teaspoon black pepper
Juice of half a medium lemon (about 1 1/2 tablespoons)
1/2 cup freshly grated Parmesan cheese
Crushed red pepper flakes

Cook pasta according to package directions.

Meanwhile, heat oil in large skillet over medium heat until hot. Add mushrooms and garlic; cook 5 minutes or until mushrooms are almost tender, stirring frequently. Stir in spinach, basil and black pepper; cook 3 to 5 minutes or until spinach is wilted. Stir in lemon juice. Remove from heat.

Add pasta to skillet; toss gently to combine. Add Parmesan; toss. Season with pepper flakes, as desired.
