Meatball Sliders with Peppers & Onions

Get dinner on the table fast with these simple yet delicious Meatball Sliders with Peppers and Onions! Loved by adults just as much as kids.

It's only the first week of school and the schedule is already packed! School activities, football practices, back to school parent meetings, and the first football game of the season. Let the craziness begin! My biggest challenge, as I've mentioned before, is getting good quality, delicious meals on the dinner table for my family, without having to turn to takeout.

In sticking with those ideals of having simple, great tasting food, I created these delicious Meatball Sliders with Peppers & Onions. As you can see in the picture above, that is all it took to create a fabulous meal for my whole family! Well, that and a few sprinkles of mozzarella cheese. But that's it! You can find the pepper and onion mixture in the produce section of your local grocery store. Most stores carry it either diced up or in larger pieces, like I have. Either way, it will work great in this recipe.


Even better yet, this recipe can be made from start to finish in less than 30 minutes! So when the kids come home starving, they won't have to wait too long for dinner to be on the table. This recipe only uses about half the bag of meatballs, so you have plenty left over for more sliders, or another recipe.

Meatball Sliders with Peppers & Onions

Serves 4 {3 sliders per person}
Print this recipe

Ingredients:
1 Tablespoon olive oil
1 package pepper and onion slices
26 oz. jar marinara sauce
1 package slider buns
1 cup shredded mozzarella cheese

In a large Dutch oven or pot, warm the olive oil over medium-high heat. Add the pepper and onion slices and cook until softened, about three minutes. Add the meatballs to the pot and cook, stirring often, until browned on all sides, about five minutes. Add the jar of marinara sauce and stir everything to combine. Reduce the heat to low and cover. Continue to cook for 10 minutes.

Split open all of the slider buns on a platter of individual plates. Place two meatballs on each slider, followed by a spoonful of sauce and some of the veggies. Sprinkle a little mozzarella cheese over the top of each one and place the top on. Serve the sliders immediately.
