These cookies are crazy simple to make, with just a few ingredients that you should already have in your pantry.
Crispy on the outside, soft in the inside, and rich in flavor. I guarantee your friends and family will love them.
Well, unless your peeps don't like cinnamon. Then we have a problem. But if they like cinnamon, these cookies are for you!
Rich Cinnamon Cookies

Makes approx. 3 dozen cookies
Ingredients:
1/2 cup unsalted butter, at room temperature
1 cup granulated sugar
2 eggs
1 Tbsp pure vanilla extract
2 cups cake flour
2 cups cake flour
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
In the bowl of your stand mixer, beat the butter and sugar together until light and fluffy and pale in color. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla.
In a medium sized bowl, whisk together the dry ingredients. Add the dry ingredients to the wet ingredients in a few small batches, beating well each time until thoroughly combined.
Chill the dough in the refrigerator for about one hour.
While the dough is chilling, line a baking sheet with parchment paper or a Silpat and set aside. Just before you are ready to bake the cookies, preheat the oven to 400 degrees.
Using a medium cookie scoop, drop the cookies onto the prepared baking sheet. Bake for 7 - 8 minutes, until the cookies are lightly browned.
Allow the cookies to rest on the baking sheet for 5 minutes before removing them to a cooling rack to cool completely. Store in an airtight container or cookie jar.
