Simple Granola & Yogurt Parfait

I've posted a couple of granola recipes on the site before. Back in February I made Chocolate Coconut Granola, based on a Bobby Flay recipe. More recently I made Walnut Apricot Granola. I love granola and so do my kids. Especially sprinkled over yogurt.

This time I wanted to make something more simplistic. Just a basic, no fuss, easy granola. I got some inspiration from Ina Garten and came up with this simple granola recipe.

Ever since then, I've been eating yogurt and granola parfaits like they're going out of style. I have one just about every morning. And sometimes one at night too. They're addicting. 

This recipe makes A LOT of granola. About 12 cups or so. Just store it in a nice airtight container and it will last you for weeks. Or maybe not, if you eat it every day like me.

Simple Granola


Ingredients:
4 cups rolled oats (I use Bob's Red Mill Thick Rolled Oats - they are my favorite!)
2 cups sweetened shredded coconut
2 cups slivered almonds
3/4 cup vegetable oil
1/2 cup honey
1 Tbsp cinnamon
1 cup dried cherries (you can substitute any dried fruit that you like)

Preheat your oven to 350 degrees.

Toss the oats, coconut and almonds together in a large bowl. Whisk together the oil, honey and cinnamon and pour it over the oat mixture. Stir well until all the oats and nuts are coated. 

Pour the oat mixture onto a large sheet pan, spreading into one layer. Bake, stirring about every 15 minutes with a spatula, until the mixture turns golden brown, about 45 minutes.

Remove the granola from the oven and allow to cool, stirring occasionally. Add the cranberries. Store the cooled granola in an airtight container.


To make a yogurt and granola parfait, layer some fresh fruit in the bottom of a glass or bowl. On top of that add some yogurt, then sprinkle on a nice layer of granola.
