Kicking off Elf for Health!

I am so excited that today is the kick off for Elf for Health! Haven't heard of Elf for Health yet? Well let me give you a quick recap. Created by Elle from Nutritionella and Lindsey from The Lean Green Bean, it is a six week challenge starting today and going through the first week in January. Our first challenge today is meatless Monday! For lunch I made roasted maple delicata squash rings and they were DELICIOUS! First time I've had delicata squash and it definitely won't be the last. Tonight for dinner I'm making an eggplant mozzarella melt. Wish me luck that my boys will eat it!

Here's my roasted delicata squash recipe. Enjoy!

Ingredients:
1 large delicata squash, cut in 1 inch rings, seeds removed

1/3 cup maple syrup
1/4 cup olive oil
1 tsp cinnamon 
1 tsp ground cardamom 

Directions:
Preheat oven to 350 degrees. Mix the maple syrup and oil together and whisk in the cinnamon and cardamom.

Toss the rings with the maple syrup mixture and lay flat on a greased sheet pan. Season them with salt and pepper.

Roast the squash for 40 minutes, turning halfway through the cooking time.

Remove from the oven and serve!
