Hello friends! I know it's been a little quiet around here lately and I apologize for that. You see, I started a new job the first of the year which has rocked. my. world. I love the job and love what I do but it is extremely busy. I've been working 9+ hour days and still keeping up with the normal mom/family/animal/household stuff, which has left me a bit tired haha. I finally feel like I'm getting into a nice routine and am excited to be recipe developing, cooking and photographing once again. What that means for you is new recipes...yeah!


I know most of you are just as busy as I am during the week. Whether you're working long hours or running kids to their school and sporting events, we all crave a delicious home cooked meal after a long day. What we don't have are hours to spend cooking dinner on those crazy days. I have several tried and true, quick and easy recipes that I turn to when I'm having one of those days (or weeks!), and this Weeknight Meatball and Pepper Skillet is now one of them!

This meal comes together in 25 minutes, start to finish. How is that for the perfect weeknight dinner?!  It starts off with a package of Farm Rich Grape & Chili Sauce Meatballs. If you haven't tried these yet, you must! They’re available at Walmart stores now in the freezer section. The Meatballs are so tender and delicious and the sauce is the perfect combination of sweet and tangy. They are my new favorite Meatballs! They also make the best quick and easy appetizer for any party or get together. You can quickly cook them up and serve with party toothpicks for a delicious handheld snack.

I'm a big fan of Farm Rich snacks and appetizers because they are made with wholesome ingredients, quick-frozen, and carefully packaged. It's important to me to feed my family good quality food! We haven't tried a Farm Rich snack that we didn't love, but my kids seem to always request the Mozzarella Sticks and Crispy Dill Pickles. (Which I love, too!)

So back to this recipe. In addition to the Meatballs this skillet has fresh, flavorful red and green sliced peppers. And I'll repeat, it's ready in 25 minutes. Simple. Fast. Perfect for both hungry kids and adults. Serve the Meatballs and veggies over rice, sprinkle with sesame seeds and voila! Dinner is served. Now wasn't that easy? 😉
Weeknight Meatball and Pepper Skillet

Serves 4 - 6

Ingredients:
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
Sesame seeds, for garnish
White rice

Place the Meatballs in large skillet over medium heat and stir in the sauce. Cover the pan and cook for 10 minutes. While the Meatballs are cooking, make the rice.

Add the peppers to the skillet and stir well to combine. Cover the pan and cook for an additional 15 minutes.

Remove the pan from the heat and sprinkle the Meatballs with sesame seeds. Place the cooked rice on plates and top with the Meatball and veggie mixture.
