I know it's only July and we are still in the thick of summer, but it's time to start thinking about the kids going back to school. I know, I know, it's early, but it will be here before we know it! Once that first day of school rolls around our lives seem to get turned upside down and the craziness ensues. I love shopping at Walmart because they have great deals on everything I need to prepare simple, quick, and delicious meals at home, especially Campbell Soup Company products. Take this Mexican Chicken Tortilla Casserole for example. You may think this looks time consuming to make, but it's not! It can also be made ahead of time which is a huge time saver.

For this recipe I used Pace® Homestyle Salsa and Swanson® Premium Chicken, two of my favorite shortcuts! Pace® adds a kick to your dishes with a genuine Southwest flavor. (It's also perfect for snacking with tortilla chips!) Swanson® Premium Chicke is low fat and heart healthy, and it's ready to use right out of the can for everyday recipes. These two ingredients are a staple in my pantry.

This casserole couldn't be any easier to assemble. The filling ingredients are mixed together in a large bowl, there is no pre-cooking needed. The corn tortillas are cut in half so that they fit evenly in the dish and cover all the edges. A layer of tortillas, a layer of filling, then repeat. That's it! At this point you can either bake the casserole immediately or pop it in the refrigerator and bake later. It's that simple.

Mexican Chicken Tortilla Casserole

Ingredients:
12.5 ounce can Swanson® Premium Chicken, drained
15 ounce can black beans, drained and rinsed
14.5 ounce can diced tomatoes with garlic, basil and oregano
1 cup Pace® Homestyle Salsa 
1 cup frozen corn
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
8 (6-inch) corn tortillas, cut in half
1 1/2 cups Mexican blend shredded cheese
Chopped fresh cilantro, shredded lettuce and sour cream, for topping

Preheat the oven to 350 degrees. Spray a casserole dish with non-stick cooking spray and set aside. 

Add the chicken, black beans, diced tomatoes, salsa, corn, chili powder, cumin, and salt to a large bowl and mix well. 

Arrange 8 tortilla halves in the bottom of the prepared baking dish then top with half of the filling mixture. Top with the remaining 8 tortilla halves and the remaining filling. 

Cover the dish will foil and bake for 20 minutes. Uncover the dish and sprinkle evenly with the cheese. Bake for an additional 10 minutes. Sprinkle the top of the casserole with fresh cilantro. Cut into pieces and top each serving with shredded lettuce and sour cream.
