Over the years our Christmas Eve traditions have mostly stayed the same, but I like to change our menu up from time to time. For years we enjoyed appetizers that night after returning from mass. My mom and I would make a huge spread of both hot and cold appetizers and we'd all sit and enjoy our feast while watching Christmas movies. Although I still love doing that, recently this Christmas Eve Pasta has become a new favorite tradition. The homemade sauce, filled with pancetta, Italian sausage, peppers and onions, can be made ahead of time so there isn't much to do when you're ready to eat. Just cook up a batch of fresh pasta and you're ready to go!

I have always loved pasta and red sauce and I've been eating it for as long as I can remember. When I was pregnant with my oldest I started getting heartburn, which is so common among pregnant ladies! Most of the time it goes away after the baby is born, but not for me. The doctors say you should stay away from spicy foods, tomato based foods, chocolate, alcohol, coffee, soda, etc. That presents a bit of a problem for me because I LOVE tomatoes, chocolate, and coffee. I honestly don't think I could live without any of them.

So how do I cope with heartburn and still enjoy my favorite things? Christmas Eve Pasta

Serves 6
PRINT

2 Tablespoons extra-virgin olive oil

1/2 cup chopped onion
2 cloves garlic, grated
1 carrot, grated 
1 red bell pepper, chopped
5 ounces diced or cubed pancetta (can be found packaged in the deli section of the grocery store) 
1 pound Italian sausage
2 - 28 ounce cans crushed tomatoes
1 Tablespoon fresh parsley, finely chopped
Red pepper flakes
Salt and black pepper
1 pound penne pasta, cooked 
Parmesan cheese, for topping

Heat the oil in a Dutch oven or large pot over medium high heat. Add the onion, garlic, carrot and bell pepper and cook until softened, 2 minutes or so. Add the pancetta and sausage and cook until browned. Add the tomatoes. Stir in the parsley, a dash or two of red pepper flakes, and a pinch of salt and pepper. Bring the sauce to a boil, then reduce the heat to a simmer and cook for 20 minutes. 


Place some pasta on each plate and top with a couple ladles of the sauce. Sprinkle with Parmesan cheese, if desired.
