We all know my love for Italian food runs deep. I mean REAL deep. I could eat it pretty much every single day and not get tired of it. Lemon Penne Pasta with Mushrooms and Spinach

Makes 6 servings
Prep Time: 15 minutes | Cook Time: 15 minutes
1 box Dreamfields Penne Rigate
1 box Dreamfields Penne Rigate
2 tablespoons olive oil
2 cups thinly sliced fresh mini Portobello mushrooms
2 cloves garlic, grated
1 package (5 ounces) fresh baby spinach
1 tablespoon chopped fresh basil
1/4 teaspoon black pepper
Juice of half a medium lemon (about 1 1/2 tablespoons)
1/2 cup freshly grated Parmesan cheese
Crushed red pepper flakes
Cook pasta according to package directions.
Meanwhile, heat oil in large skillet over medium heat until hot. Add mushrooms and garlic; cook 5 minutes or until mushrooms are almost tender, stirring frequently. Stir in spinach, basil and black pepper; cook 3 to 5 minutes or until spinach is wilted. Stir in lemon juice. Remove from heat.
Add pasta to skillet; toss gently to combine. Add Parmesan; toss. Season with pepper flakes, as desired.
Nutrition information (1/6 of recipe): 300 calories; 12 g protein; 48 g carbohydrates; 8 g total fat; 2 g saturated fat; 7 mg cholesterol; 160 mg sodium; 6 g total dietary fiber.
