This fresh summer salad is sweet, salty and spicy. It's like a party for your palate!
My Spoonful of Foodies friends and I are doing something so fun this week!! We all pitched in to put together a special date night menu for you all. On Monday we shared cocktail and bread recipes, and on Tuesday we shared an appetizer and a first course soup. I'm sharing my recipe today, then the rest of the menu will be published later this week!

I was tasked with a first course dish and decided to go with a summery salad. At first I wasn't sure what I wanted to do, so I headed to the market to get inspiration from the fresh produce. Yes folks, the produce speaks to me. It's a good thing, trust me. Not weird at all.
Well as I was looking through all of the amazing fresh fruits and veggies, a bin full of beautiful pears caught my eye. And that's really all I needed. It started with pears, then to sweet raspberries, then peppery arugula, then salty feta. The light bulb went off in the ole' head and I knew what I wanted to make.
So here you have it, a simple yet gorgeous salad with delicious summer fruits, some salty cheese, spicy arugula and a light vinaigrette. Perfection.

6 oz. fresh raspberries
1 D'anjou pear, thinly sliced
3 oz. crumbled feta
For the dressing:
3 Tbsp extra virgin olive oil
2 Tbsp apple cider vinegar
